What's an easy way to preserve hot yellow peppers?

My yellow pepper plants in my garden are producing like crazy and I want to can, preserve, or pickle them. I have some hot yellow peppers that I would like to cut into rings and preseve like the jars of peppercinies that you see at the grocery store. I have sweet peppers too and want some Ideas as to what to do with them as well.

  1. best way is to pickle them.. in a vinegar brine.. canned...  


  2. For the sweet peppers why not roast them or grill them peel of the skin and jar them with olive oil, garlic herbs and other seasonings for a snack, appetizer or to add on or to hot pastas during the winter.

    I am a former chef and do this and along with other veg like romano beans, eggplants, I buy baskets and prepare them Italian style for the winter. You can do it simply or add some zip with spices, herbs,garlic and flavourings, alot depends on you likes and your family's eating habits, but a garden full of veg is a treasure trove of ideas.
