What's any easy dinner my boyfriend and i can make?

We live in an apartment and we don't have a lot of kitchen supplies, but we have the basics. We both love chicken and like to eat pretty healthy and for not too much money. What's something that we can make together that I can easily remember the recipe but is very tasty?

  1. A nice home cooked meal that require few kitchen tools, not to high in cost and a tried and true...Roasted chicken, oven roasted potatoes and a nice steamed veggie.  Chicken: Get a roaster chicken (free range is a plus) Rub the outside w/ lil olive oil and season w/ salt & pepper. Inside the chicken put 1 lemon cut in 1/2 a couple of rosemary sprigs and a few sage leaves. Follow directions on chicken pkg for roasting.  Potato: cut into 1 inch pieces toss w/ olive oil S & P and roast  shallow baking pan at 400 for about 25 mins (I do this w/ sweet potato sometimes for a change) Hope you find this helpful


  2. When I was your age my fav meal to make for myself, my roommates or my BF was:

    1) Oven baked BBQ chicken: 325 oven cooked for about half an hour (but keep an eye on it). Just put chicken thighs in a baking dish skin side up and pour some BBQ sauce on each thigh. Super easy and super delicious.

    2) Baked potato with sweet butter. Great just like that but can add sour cream if want.

    3) Tossed Green Salad: Great thing about a tossed green salad is that you just start with the basic... either some bagged greens or a head of whichever lettuce you like.  Then you add whatever you like: chopped hard boiled egg; canned sliced beets; canned garbanzo beans; sliced onion; cherry or grape tomatoes; sunflower seeds; chopped fresh mozzarella balls; canned asparagus spears, etc.  The skies the limit!  As is the dressing you put on it.  I'm addicted to Marie's Blue Cheese Dressing (found in the refrigerated section of the produce dept.), but just oil and vinegar is good if you already have added some kind of cheese to the salad.

    Pretty self explanatory...grill chicken & sautee veggies. serve on warm tortillas.  if you really want to get fancy & splurge a little, marinate the chicken a few hours before in lime, tequila, jalapeno, garlic & olive oil.

    bung all ingredients into a pan, along with a tin  of water and cook until boiling. if sauce is too thick add more water.  :)

How about chicken and rice.  So simple, you put 4 skinned chicken b*****s in a crock pot.  Hope you have one!  Add a can of cream of mushroom soup and a half can of water.  Top with fresh sliced mushrooms.  Cook for 5 hours on high and 7 to 8 hours on low.  When chicken is about done boil up some "Minute" brown or white rice.  Voila' nothing could be easier.  My husband loves this so we have it at least once a week.  The crock pot really tenderizes the meat and the mushroom soup makes a delicious gravy.  I'll usually have broccoli or a green salad on the side but you wouldn't really have to.

  8. sloppy joes, hot dogs, spaghetti, enchiladas, grilled chicken w/ veggies, baked salmon and wild rice. We use ground turkey instead of ground meat, and whole grain pasta. Doesn't make up for those enchiladas though, haha.

  10. Its shrimp, not chicken, but you're going to love it.   Toughest part is peeling and deveining the shrimp, otherwise, its done in 30 minutes or less.  Here's what you need:

    Half pound of linguine or angel hair or spaghetti

    1 cup sliced fresh mushrooms

    1 pound medium shrimp, peeled and deveined

    1 1/2 cups sparkling wine (champagne)

    1/4 teaspoon salt

    2 tablespoons minced shallots

    2 plum tomatoes, diced

    1 cup heavy cream

    4 or 5 garlic cloves.

    1.  Start cooking the noodles first.  Sauce comes quickly.

    2.  Chop garlic and saute in couple of tablespoons of olive oil. Once garlic is all brown, remove as much as you can from pan.  Put in and saute sliced mushrooms in what is now garlic flavored olive oil.  Once mushrooms are tender, take out and put aside.

    3.  Put sparkling wine (use Totts or Cooks 5 or 6 bucks), shrimp, salt in medium size pot and cook.  As soon as wine starts to boil, remove shrimp and set aside.  

    4.  Put roma tomato's and shallots into wine.  Boil until you have a little more than 1/2 cup left.  Eyeball this constantly, as once it starts to evaporate, it'll fast.  Err on the side of having more liquid left.  It will take less than 10 minutes for it to evaporate.

    5.    Reduce heat and add in 3/4 cup of heavy cream.  Let it mix in for about a minute or two.  Add Shrimp and mushrooms - heat it all through.

    6.  Noodles should be done.  Drain noodles and put in large bowl.  Put in 1/4 cup of heavy cream and toss well.

    7.  Plate the noodles and top with Shrimp sauce.  Sprinkle brown chopped garlic on top as garnish.

    Have a feast.

  11. We like to get boneless chicken strips, season them and throw them in a pan with butter and fry on high for a little while.  Then add some broccoli and cook for a little longer without a top on the pan.

    You can bake a couple of potatoes in the microwave at the same time.

    Make a nice salad and you've got a great nutritious meal.

  13. Chicken Ritz Casserole

    Ingredients:

    5-6 chicken b*****s, cooked

    1 can cream of chicken soup

    1 can cheddar broccoli soup

    about 1/4 soup can of milk

    1-1/2 c. sour cream

    2 c. cooked minute rice (1 c. prior to cooking)

    dash salt and pepper

    30 to 40 Ritz crackers, crumbled

    Butter

    Cooking Instructions:

    Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

    Garlic Chicken b*****s with Brown Sugar

    This is so easy and very good!

    5 Tbs oil

    6 or more garlic cloves, minced

    1 Tbs brown sugar

    3 boneless skinless chicken b*****s

    Preheat the oven to 500F.

    Heat the oil over medium heat, add the minced garlic and cook slowly, stirring constantly, until softened. Make sure the oil is not too hot. You don't want to brown the garlic and it can get to that point quickly if you're not careful.

    Take it off the heat after 5 minutes or so and add the brown sugar and stir it in.

    Line a shallow roasting pan with foil and spread oil across the foil. Lay your boneless skinless chicken b*****s across it, spread the garlic/oil/brown sugar mix across the chicken. Bake for 15 minutes, or until done.

    chicken parmesan:

    a pound of chicken cutlets (or buy chicken b*****s and cut them into thinner 'tender' size pieces)

    a cup of italian breadcrumbs

    half a cup of parmesan cheese

    one egg, beaten

    a cup of flour

    mozzarella cheese slices

    tomato sauce (I prefer prego traditional, but use whatever you like)

    olive oil

    put the flour in a bowl, the egg in a second bowl, and the mix the breadcrumbs and parmesan in a third bowl.

    make sure the chicken is no thicker than about half an inch. take each piece and put it in the flour to coat it, then dip it in the egg, letting the excess run off, and then dip it in the breadcrumb mixture, making sure the entire piece is covered. do each piece you have like this.

    heat up a frying pan with olive oil covering the bottom of the pan to medium high heat. when its hot, put the chicken in the pan and let it sit until the bottom sides are golden (depending on your stove heat, 1 minute-3 minutes) then flip and do the other side, when both sides are golden remove the chicken.

    if I have time I like to put the chicken in a casserole dish with sauce poured over it and a slice of cheese on top of each, cooking at 375 until the cheese gets melted and bubbly. you can always just heat the sauce and pour it over the chicken and put a cheese slice on each piece and serve it like that too. its great with a side of pasta and garlic bread

    Spiced Up Chicken Enchilada Casserole

    This layered casserole features tortillas, refried beans, cooked chicken, whole kernel corn, Mexican-blend cheese, and enchilada sauce.

    :

    • 8 chicken b*****s

    • 2 tablespoons favorite Mexican spices

    • About 10 flour tortillas (either white or wheat)

    • 1 1/2 cups refried beans

    • 2 cups whole kernel corn

    • 2 cups Mexican-blend

    • cheese inside + 1 cup more for topping

    • 2 1/2 cups Enchilada sauce

    •

    Method:

    Cook chicken b*****s sprinkled with Mexican spices either in skillet or in the oven until thoroughly cooked; shred the chicken and set aside. Take a 9X13 pan and grease it with cooking spray. Cover bottom and half way up sides with tortillas (2 or 3), tearing to fit. Spread HALF of the refried beans over tortillas. Sprinkle with HALF of the chicken, corn, cheese, and 1 cup of the enchilada sauce. Layer more tortillas on top to cover and repeat layering process. When done with the second layer, put the remaining tortillas on top and spread the remaining 1/2 cup of enchilada sauce on top. Cover with foil and place in a 375 degree oven for about 35 minutes, or until hot. Remove foil for last 8 minutes of baking and sprinkle with remaining cup of cheese. Cut, serve, and enjoy!

    Notes:

    This recipe is so full of flavor and perfect for busy families who do not have that much time in the evening to cook. This will definitely become a family favorite. This recipe makes plenty for any number of people, because leftovers are always a plus!

    Zippy Tex-Mex Chicken

    This "hot" skillet meal combines Mexican-style Rice-a-Roni with cubes of cooked chicken, corn, tomatoes and canned jalapeno peppers.

    :

    • 2 boxes Mexican-flavor Rice-a-Roni

    • 4 Tbsp butter

    • 4 boneless, chicken breast halves, cooked and cubed

    • 1 cup frozen whole kernel corn

    • 1-2 cut up tomatoes

    • 1/2 jar or about 1/2 cup sliced jalapeno peppers

    • Sour cream

    Brown Rice-a-Roni in 4 Tbsp butter, and add water as per instructions on rice-a-roni boxes. Add the cooked chicken breast pieces, the corn, and the seasoning packet. Put on the lid and cook for the time recommended on the box, about 20 minutes. When done mix in the cut up tomatoes and peppers. I put the sour cream on the table when I serve this--a nice big do

  14. You can cook some boneless skinless b*****s in some Italian dressing in the Crock Pot, make a big salad with all your favorite salad items, and throw in the chicken.

    Or, I like to cook them in a pan on the stove with Lawry's Lemon Pepper seasoning and make rice a roni and have chicken sandwiches with rice.

    Both are real easy.

  15. Chicken is very flexible to bake, roast, boil, or fry; all of them good.

    Buy a whole chicken or just cut-up parts, they'll last you a week.

    Combine it with pasta, rice, or potato, for some variety.

    Get lots of vegetables for variety & colour, to relieve boredom.

    For health concerns, you can remove the skin from the chicken.

    I like to coat mine with Shake'n'Bake, but cornmeal works also.

    Bake in 450F oven for 45 minutes or more, test for clear juices.

    Get whole-grain pasta, brown rice, & limit the potatoes.

    These can all be boiled, served alongside, or with sauces.

    Buy tomato sauce, mushroom soup, or whatever you like.
