  1. Easy Brisket & Beans

    1 aluminum roasting pan (turkey size)

    aluminum foil (heavy duty the large width if possible but the regular aluminum foil will work)

    1 full size brisket – market trimmed

    salt & pepper (I use kosher salt and garlic pepper)

    1 bag (1lb) pinto beans, rinsed (do not soak)

    1 can diced tomatoes

    1 can diced tomatoes with green chilies

    1 bell pepper, seeded and sliced

    1 onion, thinly sliced

    4 cups water

    Preheat oven to 275 F.  Salt & pepper your brisket but don’t over do it.  Place brisket in pan fat side up, scatter the beans around the brisket.  Pour both cans of tomatoes, with the juice, over and around the brisket.  Top with bell pepper and onion.  Cover tightly with foil and bake at 275 for 10 hours.  Do not peek at the brisket…it will not fully cook if you pull the foil off before time is up.  

    Marinated Carrots

    2 lb carrots, peeled and cut somewhat thick (you can also use 2 lb baby carrots)

    1 can (10oz) tomato soup

    ½ cup vegetable oil

    ¾ cup cider vinegar

    1 cup sugar

    1 medium diced onion

    1 cup cut bell pepper, seeded

    dash worcestershire sauce

    1 teaspoon prepared mustard

    ¼ teaspoon pepper

    Cook carrots until they are mostly done, they should have a little crunch left in them.  Add cold carrots to the water and cook for about 15 – 20 minutes works for me.  Drain carrots and let cool.  Combine remaining ingredients and add carrots.  Refrigerate at least 8 hours before serving.

    Also if you have a bread machine that makes a large loaf of bread (uses 3 cups of bread flour or more) you could make regular white bread and add 1 Tablespoon of garlic pepper to the ingredients.
