  1. What does the sauce look like?  There's a lot of sauces out there.  Is it ginger and onion sauce?

  2. chicken teryiaki?

  3. peanut sauce?

  4. there is a dish Hainanese Chicken Rice - poached chicken on rice cooked in stock served with ginger and chilli sauces, could this be it?

  5. It can be several dishes, below are 2 I can think off:-

    1) If it's Lo Mai kai(literately means glutinous rice chicken). Usually the sauce varies it depends on the chef's skills to make it. But you can buy it off the shelf, it taste similar to "teriyaki sauce". Else you can try to make iyour version, it's combination of black sauce, seasoning & oyster sauce.

    2) Hainese Chicken Rice. The sauce is actually obtained from the chicken stock which comes from the BBQ/steamed chicken. It's cooked wth some other seasoning & honey till it's thick & pour over.

Both of the sauce taste salty with tingle of sweetness. But the 1st dish, the sauce is thicker.
