  2. I'm not sure, but it's not mise en place. Mis en place means "everything in its place" and is when you set up all of your ingredients before you start cooking/mixing/whatever.

  4. I think you may mean "Mis en place".  Excuse the spelling, I know that's not right.   I hope this will at least steer you in the right direction
