  1. Mix some flour in a plastic bag.  put salt pepper and mrs. dash in the bag with flour.  Shake each piece of chicken until fully coated.  Place chicken in very hot oil until nice and brown. make sure the center is cooked.

    Buttermilk Fried Chicken  

    1 quart buttermilk

    1 (2- to 2 1/2-pound) broiler-fryer, cut up

    1 teaspoon salt

    1 teaspoon pepper

    1 cup all-purpose flour

    2 cups vegetable oil

    1/4 cup bacon drippings

    Combine chicken and buttermilk in bowl. Cover and chill 8 hours. Drain chicken.

    Combine 1 teaspoon salt and pepper; sprinkle half of pepper mixture evenly over chicken. Combine remaining pepper mixture and flour in a large freezer bag. Place 2 pieces of chicken in bag; seal. Shake to evenly coat. Remove chicken, and repeat procedure with remaining chicken, 2 pieces at a time.

    Combine vegetable oil and bacon drippings in a 12-inch cast-iron skillet or chicken fryer; heat to 360°. Add chicken, a few pieces at a time, skin side down. Cover and cook 6 minutes; uncover and cook 9 minutes.

    Turn chicken pieces; cover and cook 6 minutes. Uncover and cook 5 to 9 minutes, turning pieces during the last 3 minutes for even browning, if necessary. Drain on paper towels.

    Note: For best results, keep the oil temperature between 300° to 325° as you fry the chicken. Also, you may substitute 2 cups buttermilk for the saltwater solution used to soak the chicken pieces. Proceed as directed.

  3. Soak chicken pieces in buttermilk for 2-3 hours or even overnight if you have the time. Take it out and season with salt and pepper.

    Season all purpose flour with salt, pepper, garlic powder and onion powder. Place the flour in a bag, place 2-3 three chicken pieces at a time in the bag and shake in the flour. Then dip back in the buttermilk and back in the flour again.

    Heat vegetable or peanut oil in a deep pan (3 inches or more, preferably cast iron). I check the temp of the oil by flicking a drop of water into it. If it snaps and pops, you're ready.

    Add your chicken to the hot oil and cook until brown on one side then turn and brown the other side.

    I also mix honey and hot sauce to drizzle on the chicken before serving.

  4. The  best way is not the easiest way! Do this an hour before you are ready to fry it.

    Wash your chicken pieces, pat dry with papaer towels. Beat 2 eggs, with 1/2 cup water, garlic powder, lil salt, pepper and paprika.  Lightly salt n pepper(cayenne if you want it spicey), Now you need seasoned flour "SELF RISING!!, NOT ALL PURPOSE" in two seperate bowls,  roll the chicken in the first bowl of flour then in the egg washKEEP STIRRED AND HAVE THE PAPRIKA FLOATING ON TOP SO ADD A LIL EACH BATCH shake off excess, then roll it in the second bowl of flour. Your hands will get gunky so be careful. Shake off the excess, now when it is all breaded, lay it on a rack to sit for an hour so the flour will harden and stick to the chicken. When you are ready, heat peanut oil in a deep skillet or fyer or fry daddy. Heat to 350, drop ab out 3 at a time depending on the size so the meat can mover around in the oil, cook 10 min, try to maintain 350, now put it on a rack and put it in a 250* oven for 10 minutes to hold, it will crisp the flour up and fininsh cooking. Sorta like Popeyes

    It would be nice if you have a presto electric frying pan or other make...Presto is cheap and easy to use.

    Buy four bottles of vegatable oil. Get your chicken, my girls like thighs fried. Get yourself a large onion.

    Ok, at home pour the oil in to leave about an inch and a half of freeboard. Turn the electric pan on 350 deg and let it heat while you prepare the chicken.

    Put two cups of flour in a bowl. get your favorite spices out of the pantry to mix.

    I like lemon pepper, garlic powder, onion powder, sea salt, fresh ground pepper, cumin, red pepper and roasted paprika. You should be adding about 1/2 cup of combined spices total.

    Now, throw in an egg and a can of beer, and mix this mess together well. Dip your chicken in the batter and slide it carefully into the hot oil. Only add 4 pieces of chicken at the most. Let it fry about ten minutes and then roll them over for another ten minutes. Take the pieces out and put them on a plate with a paper towel to soak the oil up.

    While you are waiting for a batch of chicken, slice that onion in 1" slices to make onion rings...dip them in the batter and cook them like the chicken...these will cook faster so watch for that golden brown ...

    Throw in a Romaine salad, a nice cold one and have at!!

    Oh yeah, when the oil is cooled down from the cooking, drain it back into the bottles using a funnel and cheese cloth (I've used a clean T shirt!) and you can fry chicken two more times with it safely!!

  7. Grab it, throw it in the fryer (feathers and all), and close the top quickly.  Voila.

  8. buy fryer chickens, pull them all apart, put them in a sink full of cold water, mix up straight flour with a little pepper and some seasonings you like and coat the pieces in the flour. use crisco to fry them in. just melt the crisco down in a big pot and cook the chicken on low-medium heat. if you cook it too fast the insides won't get done

If you have time, try marinating it the night before.  This will allow the flavors to set in better.  And don't be one of those "season the flour, not the chicken" people.  This will ensure a flavorful crust and bland, flavorless meat.  Try buying the chicken already cut up, season it (I like to use Goya Pollo en Polvo, which is a chicken bouillion, with some added black pepper and onion powder), heat the oil, dip the chicken in flour and fry.  Also, poke the chicken when you think it's done; if the juices run clear, it's done.  If there's blood, it's obviously not done.

    dredge your chicken in the flour mixture and fry...

    oh yea you can soak your chicken in buttermilk for like thirty minutes before you dredge in the flour

  12. You can buy some seasoned flour at the store that you can use to bread the chicken.  Dip the chicken in milk, then cover it in the breading.  Then put it in a pot full of hot cooking oil.
