I need to leave from either New Orleans or Mobile

Norwegian Spirit or Carnival Fantasy are the only choices out of New Orleans, and Carnival Holiday out of Mobile.

Go to vacationstogo.com, and you can get info on both cruises, as well as prices for various dates.

Then go to cruisecompete.com and enter your "choice" date, and see what prepaid gratuities or ship board credit you can get.

I actually just booked a cruise leaving out of New Orleans.  I would recommend that over the one leaving Mobile, which is one of the oldest Carnival ships and is way out of date.  I went to orbitz.com and I got a free upgrade to an oceanview room for around $400, which is amazing. I also found cheap deals at aaa.com

Well, there are a bunch of things you can do to get the best deal.  The most important is actually WHEN you sail.  If you can avoid school vacations there are much better prices (since fewer people can cruise then): Feb, March, October, November are your best bets.
