What's the best way to cook salmon steaks?

Last time, I grilled them and they turned out a bit hard and dry. I want them to be ok as I'm having a friend over this evening!

  1. Grilled them on a very open flame, skin side first.If no open flame is available, then a very hot iron works the same. Leave it for three minutes on one side and then turn it for another three mins. That is it! You don't overcook salmon. Salmon is a very safe meat. It's used raw on sushi, so overcooking it makes it unbearable to eat. Tip: Don't put lemon juice on any fish. This will only start the cooking process right there. Then you will a grilled ceviche on your fire, and it's hard to work with that.

  3. Melt maybe 50g of butter in a frying pan. Season the butter with a lot of salt and pepper. Then place the salmon steaks in the pan, add more salt and pepper over the salmon. Add Mild/Medium/Hot Chili powder and sprinkle that over. Add wild garlic, and 1 garlic clove. Keep turning the salmon for about 5-8 minutes or until pale pink. Add more butter to keep it moist while cooking if need be, and then plate up and garnish with a light seasoned salad, with mayonnaise.

  5. Perfect salmon with out the skin.Here is what i do and it is easy and delicious.

    Make a bed of onions in your pan,salt and pepper the onions.

    Season the salmon very well with salt,pepper.and a touch of garlic powder,place on top of onions,drizzle a little live oil,and lemon juice.

    bake salmon for 20-25 min.with out turning in med. heat.

    The sweetness of the onions complement the fish and give it another dimension.

    Serve with the onions decorate with capers and lemon wedges.

    In order for salmon not to get dry don't over cook,but you can't go wrong with this recipe the bed of onions will keep it nice and moist.

  6. My favourite way is baked in milk in the oven, lots of cracked black peppar. Put them in for 15/20 mins once the oven is hot.....

  7. I do mine in milk - I get a heavy frying pan, place the salmon steaks in with enough room between them for them to cook evenly. Then put in enough milk to come half way up the steaks and cook on a medium heat. The steaks stay lovely and soft - plus you can then make a white sauce from the milk you have poached the salmon in (melt some butter in a saucepan and add flour to make a rue. Then add the milk little by little, stirring constantly. You will end up with a lovely smooth sauce with a subtle salmon flavour - add some parsley for a nice edge)

  9. I make a mixture of kosher salt, black pepper, parmesean cheese, and parsley and mix it with olive oil. I massage it into the salmon, then broil it for about 15 minutes. It gets crispy on the outside, soft and juicy on the inside. The spices don't cover up the salmon flavor, but enhance it. Everyone I cook this for loves it. I usually pair it with parmesean risotto, and broccoli with hollandaise.

    4 Salmon steaks  2 sm Yellow crookneck squash --  

    Salt and freshly ground  Split lengthwise  

    Black pepper  8 Green onions -- trimmed  

    Olive or vegetable oil  2 ts Dried thyme  

    2 sm Zucchini  

    Instructions for Charcoal-Grilled Salmon Steaks with Grilled Vegetables

    1. Prepare a hot charcoal fire and preheat the grill. Remove salmon from the refrigerator at least 20 minutes before cooking. Season steaks lightly with salt and pepper and rub them with a little oil. 2. Season squashes with salt and pepper and rub them with a little oil. Grill squashes and green onions until they begin to soften, then move them to the edge of the fire. 3. Toss a teaspoon or so of thyme leaves onto the coals and place the salmon steaks over the hottest part of the fire. Grill the steaks, turning only once, until a skewer easily penetrates the thickest part of the meat, about 6 to 10 minutes total cooking time, depending on thickness. Toss the remaining thyme into the fire when turning the steaks. Serve each steak with a slice of each squash and a couple of scallions.

    Grilled Salmon Steaks with Lime Butter Ingredients

    1/2 c Butter; melted (1 stick)  4 9 ounce salmon steaks  

    1/4 c Lime juice  Lime wedges  

    1 tb Pepper  

    Instructions for Grilled Salmon Steaks with Lime Butter

    Combine first 3 ingredients. Place salmon in glass baking dish. Pour lime butter over. Let salmon marinate while preparing barbecue or preheating broiler. Prepare barbecue (medium-high heat) or preheat broiler. Cook salmon until just opaque, brushing with lime butter marinade occasionally, about 4 minutes per side. Transfer to plates. Brush with any remaining lime butter. Serve immediately with lime wedges. Serves 4. Bon Appetit


  13. En Papillotte - wrapped in greaseproof paper with a  squeeze of lemon & a splash of wine, a few herbs, and baked for about 12 - 15 mins at 200 degrees - they'll steam & can be opened at the table for dramatic effect!

  16. to keep salmon moist cook in a double thickness tin foil parcel (shiny side in) in the middle shelf of the oven at 180c/350f for around 20/25 Min's (depends on size of steak) you can squeeze some lemon juice in with the salmon and place some lemon zest or slices and some herbs such as dill or tarragon in to remember to season fish with salt and pepper bon appetite !
