What's the better saddle? Courbette, Dover, Gatsby, Stubben, or Wintec.?

Right now i have a simple simple cheap English saddle. I want an all purpose saddle. I have about $300.00-$400.00 that I'm willing to spend on one. I don't want Synthetic either. I have a 16.2 hh Quarter horse. But everybody mistakes him for Thoroughbred or QH Appendix.He's got the long back high wither thing going on. I hope to find one that will keep for a LONG time. ANY SUGGESTIONS????
