What's the difference between Active Dry Yeast and Instant yeast?

I have Active Dry yeast for pizza, but the doughnut recipe I have calls for Instant yeast... As does a lot of bread I want to make. What's the difference and are they interchangeable.

  1. active yeast is generally ready to use . dry yeast must have water added and sit first..  


  2. Active Dry is almost the same as Instant. But the instant goes up faster, since it is packed with more living yeast, as well as some Vitamin C, which really turns the yeast "on".

    These yeasts are both little pellets of live yeast surrounded by dead yeast, which helps keep the ones on the inside alive.

    You can use active dry in the same recipes. Just take about half a cup of warm water out of the dough recipe, and "bloom" the active dry in it. Just a little warmer than room temperature, too hot will kill the yeast.

    Let it sit for about 10 minutes, and you should see a little bit of foaming on the top. Add this to your recipe as normal.

  3. Jonathan --- I would describe the two yeast

    this way. The regular active yeast needs to be activated in a small amount of 105*F liquid. I like to use 1/2 cup add 1 tea spoon sugar and 2 table spoons of flour stir until mixed well. Sit aside in a warm draft free place for at least 10 min. 15 min. is better. It will become bubbly and foamey. Add to recipe with remander of the liquid.

    Instant yeast is added into the dry ingreadints which is a little time saver but the temp. of the liquid needs to be much warmer check the pkg.

    but I think it calls for a 130*F liquid that is why I do not use it. Although they say you get a faster rise. But here faster is not always better. So I will contunue to use regural active dry yeast.

    but regular yeast should even work in them. when astivated as above.
