  1. Single cream is more runny

  2. Single cream is quite thin, it's only pourable and you can whip away at it for ages and it will only go bubbly.

Double cream is thicker.  It's 'spoonable' so you can put a spoon of it on something and it'll pretty much hold it's shape.  You can whip double cream and it'll get even thicker, if you d whip it, keep an eye on it - you can be whipping away, nothing happens, then it's thick, then it's a huge effort to move the whisk and then if you carry on whipping it can actually start to seperate again and once that happens, it's ruined.

  3. All have a point, but single cream is lower in butterfat around 18-20% and double cream can range from 32-38% butterfat and is quite a bit thicker, I am a former chef from Canada and when I visit my friends in Liverpool, I make a dinner for them as the lodge me for the time I am there, there cat is always glad to see me leave.

Single cream is thinner and used for soups and sauces, double cream thicker and for desserts and in baking or poured over fruit or on a pudding.
