What's the nicest resort (in your opinion) in Cancun that's not terribly expensive?

I went to Cancun about four years ago and loved it! I'd like to go again this winter and would like to know of a great place to stay. The place I stay (the Pyramids?) was really nice but not incredible. I want somewhere that has several large pools (a waterfall would be nice), several hot tubs, beautiful and tropical foliage and flowers on the grounds, swim up bars, a gorgeous restaurant or two, a cool bar on the premises, you get the drift! A place that caters more to adults rather than families with young children would be nice as it would probably be my Mother and I. Also, what are some cool touristy things to do other than clubbing and shopping (which I love, don't get me wrong!)? I'm looking for a good package deal. I'd like to spend no more than $200 a night for a hotel if I have to pay for individual nights. Thanks for any opinions. If you have pictures of a place you stayed, show me!

I just came back from Cancun on Friday 7/4/08  and don't stay at the Avalon Grand its a money pit and the entertainment sucks and the beds are hard as rocks. There is no beach because of the hurricane and the guests have to go down 2 hotels to get on a tiny beach area. Two women woke up at the Avalon Grand with a man who broke in there room at 4:30am and nothing was ever done he broke in from there balcony on the 5th floor using a ladder . The hotel never called the police they acted like it never happened way to scary don't ever go there its not a good hotel at all i wish i had never booked there.
