  1. I am a former chef and live here in Toronto Canada and love Kimchee, I buy a quart size container every other week, it is high in vitamins and iron, fiber and with the chilis and garlic is a good way to clean you out, and hot peppers aid in the digestion of foods and keep stomach acids level.

    I have been eating a fair amount since I became a lacto-ovo vegetarian, I like to add it to hot rice with a spicy tofu stew or fried tofu with a hot bean sauce, it just adds that special kick to food, I eat alot of the other kimchees, radish, the chinese broccoli one, mustard greens and the other they seel at my favorite Korean Grocery here in T.O.


  2. Mostly vitamin C. Like German Sauerkraut it is a substitute for fresh vegetables during the Winter.

Kim Chi is in essence like sauerkraut in nutritional value, it is just a korean fermented cabbage dish...the most important part of it though is its other properties, it can be carried and kept in less than pristine conditions over long periods of time and the spices added to eat keep the body temp regulated in cooler climates and also aids in digestion and supposedly contains gastric curative/antiseptic properties
