  3. Good question, is it to keep it fresh or soak up the blood or is it for some other sinister reason, we will never know unless a butcher answers this question truthfully.

  11. It is called a peach pad (don`t ask me why) and it is an absorbent pad to soak up the blood that leaches out of the meat. You will also find these pads in pre-packed fish or prawns.

    This improves the appearance of the product.
