What's the secret to those loaded big puffy cookies?

I've chilled the dough, I've used shortening instead of butter, I've tried different recipes. Yet I still get flat cookies with bumps. What's the deal?

  1. Try a higher protein flour like bread flour. You can also try to find a recipe that doesn't have so much liquid.

    Colossal Cookies

    4 cups flour

    1 tsp salt

    2 tsp baking soda

    2 cups butter

    1 to ½ cups brown sugar (depending on sweetness of add ins)

    1 to ½ cups white sugar

    4 eggs

    2 tsp vanilla

    Add ins

    Soften butter and beat well. Add brown and white sugar, beat until well blended. Beat in eggs one at at time. In a separate bowl, mix flour, salt and baking soda. Slowly beat dry ingredients into wet ingredients. Stir in add ins. Bake on a parchment paper lined cookie sheet for 9 to 11 minutes at 350 degrees. Cool on a cookie rack for 15 min before placing in container. Makes 80 cookies.

    Variation examples

    Turtle cookies – Mix in 1 cup chopped pecans,  and 1 cup chopped caramels (use only 2 ¼ cups sugar)

    Brownie cookies – Use 3 cups flour and 1 cup cocoa, 1 cup walnuts and 1 cup chocolate chips (use 3 cups sugar)

    Skor chip cookies – Use 1 bag Skor chips and 1 bag chocolate chips (use 2 ½ cups sugar)

    Triple delight – Mix in 1 cup butterscotch chips, 1 cup white chocolate chips, 1 cup chocolate chips

    Peanut Butter – Use 1 ½ cups margarine, ½ cup peanut butter, 1 cup chopped peanuts, 1 cup butterscotch chips
