  1. NO BAKE COCONUT BROWNIES

    2 (6 oz.) pkgs. semi-sweet chocolate bits

    1 c. evaporated milk

3 c. finely crushed vanilla wafers

    2 c. miniature marshmallows

    1 c. sifted confectioners' sugar

    1 c. flaked coconut

    1/2 tsp. instant coffee

    1/2 tsp. salt

    2 tsp. shortening

Combine bits and milk in top of double boiler. Stir until melted and well blended. Combine all the rest ingredients (except shortening) in a large bowl. (Save 1/4 of chocolate mixture.) Add remaining chocolate to the crumb mixture, mix well, press into well greased 9-inch square pan. Return the chocolate mixture you saved to the top of the double boiler. Add the shortening. Stir until shortening melts.

Spoon this over the mixture and spread evenly. Chill until set. Use some peanut butter in the frosting, if you like. Graham crackers can be used instead of vanilla wafers.

  2. I don't have a recipe handy, but try to find one with espresso in it... espresso brownies are sooooo yummy and rich. They don't taste like coffee, not to me anyway,

  3. Hi,

My fav is called Double Chocolate Brownies from the Recipes from Minnesota with Love cookbook

4 squares of unsweetened chocolate (a substitute for one square is to use 4 T of cocoa plus 1 T of oil, or melted butter, I use this all the time rather than buying the squares.)

    1 C butter or margarine

    2 C sugar

    4 eggs

    2 t vanilla

    1 C flour

    pinch of salt

1 12 oz package of chocolate chips

    2 C mini marshmallows.

    Powdered sugar

Melt unsweetened chocolate and butter together. Add sugar. Cool mixture. Add eggs, beating one at a time. Add vanilla, flour and salt. Mix until well blended. Fold in chocolate chips and marshmallows.

Pour into a greased 13x9 pan. Bake at 350 for 30-35 minutes.

Do not test for doneness. The top may look bubbly. Remove from oven and dust with powdered sugar.

SO Fantastic, if you like chocolate that is! : >)

    Good Luck!
