My favourite cake recipe is of Christmas Eve Cake

Ingedients:

1 cup sifted flour

1 tsp. baking powder

1/4 tsp. salt

1 cup granulated sugar

1/2 cup hot milk

1 tbsp. Butter

2 eggs

1 tsp. vanilla

For the Topping:

1/4 cup butter

2 tbsp. Cream

2/3 cup brown sugar

1 cup walnuts

Advice

Be careful, top browns quickly! Serve warm.

Method

1.Sift first 3 dry ingredients. Beat eggs until thick, for 5 minutes.

2.Add granulated sugar slowly, continuing to beat. Stir in vanilla, then dry the above ingredients.

3.Quickly stir in hot milk and 1 tablespoon butter.

4.Pour in pan, bake 25 minutes at 350 degrees.

5. Meanwhile, mix 1/4 cup butter and cream until creamy. Add brown sugar, nuts. Spread nut mixture on top of cake when done. Broil until golden brown.

My fave is BIBINGKA. it is a special rice cake that can only be bought to the Philippines. And you can only buy it into the Philippines every Christmas. So everytime the Christmas is coming I buy many of it. That's very special and delicious. I'm telling you. If you first look at it. It won't look like an ordianry cake. If you wanna be challenged Man, try this. You won't regret it.

Ingredients:

- Mochi Rice (51/2 cups)

-5 1/2 cup water

-1 can (13 oz) Milk

- Salted eggs

- Cheese

-1 lb dark brown sugar (don't use white)

-banana leaves

How to cook Bibingjka:

1. In a rice cooker or large saucepan, rinse rice; drain.

2. Add water and cook rice.

3. In a saucepan, combine coconut milk and 1 ¼ cups of the brown sugar.

4. Cook over medium heat for about 20 minutes, stirring constantly, until the mixture thickens.

5. Wilt banana leaves over low heat on electric surface unit or in microwave oven; line a 13 x 9 x 2-inch baking pan. Preheat electric oven to 350°F.

6. Stiri remaining brown sugar into the hot rice; mix well.

7. Reserving ½ cup coconut milk mixture, stir remainder into rice.

8. Put into prepared pan. Pour the reserved ½ cup coconut milk mixture over rice.

9. Bakei for 20 minutes then broil for 5 minutes to brown top. Cool and cut into serving pieces.

10. Makes 45 servings
