    Preparation Time 20 minutes

    Cooking Time 15 minutes

    Makes about 36

    Ingredients

    250g butter, cubed

    55g (1/3 cup) icing sugar, sifted

    1 tsp vanilla essence

    260g (1 3/4 cups) plain flour

    50g (1/3 cup) cornflour

    Filling

    60g butter, at room temperature

    1 tsp vanilla essence

    1 orange, rind finely grated

    110g (2/3 cup) icing sugar, sifted

    Method

    Preheat oven to 160°C. Line a baking tray with non-stick baking paper.

    Beat butter, icing sugar and vanilla essence in a medium bowl with electric beaters until pale and creamy. Sift together the flour and cornflour, add to the butter mixture and mix with the beaters on the lowest possible speed until just combined and a soft dough forms. Lightly flour hands then roll the mixture into small balls. Place on the prepared baking tray about 5cm apart. Use a fork that has been dipped in flour to flatten each ball to about 3cm in diameter and 1 cm thick. Bake in preheated oven for 15 minutes or until cooked through. Cool on baking tray. Repeat with the remaining mixture.

    To make the filling, beat the butter, vanilla essence and orange rind in a small bowl with electric beaters until pale and creamy. Add the icing sugar and beat until combined. Refrigerate until required.

    To assemble biscuits, spread the base of a biscuit with filling and then join with another biscuit. Repeat with remaining biscuits and filling. Store in an airtight container for up to 5 days.

    Notes & tips

    I have very fond memories of these biscuits - my mum made the best. We called them radio biscuits (probably a name we picked up from a CWA cookery book), others call them vanilla kisses or melting moments (exactly what they are). I've added orange rind to the filling to give them a little tang - finely grated rind of 1 lemon can also be used. Custard powder can be substituted for the corn flour if you like.

  3. Snickerdoodles are great. Everyone loves them. Here's a recipe:

    Ingredients

    • 1/2 cup butter, softened

    • 1 cup sugar

    • 1/4 teaspoon baking soda

    • 1/4 teaspoon cream of tartar

    • 1 large egg

    • 1/2 teaspoon vanilla

    • 1 1/2 cups all purpose flour

    • 4 Tablespoons granulated sugar

    • 1 1/2 teaspoons cinnamon

    Directions

    Preheat oven to 375 degrees.  In a mixing bowl, beat the butter on medium speed for 30 seconds.  Add the 1 cup sugar, baking soda, and cream of tartar.  Beat until combined, scraping sides of bowl occasionally.  Beat in the egg and vanilla until well blended.  Beat in as much flour as you can with the mixer, and stir in remaining flour.  Cover with plastic wrap and chill for 1 hour.

    Combine the 4 tablespoons sugar and 1 1/2 teaspoons cinnamon.  Shape the dough into 1 inch balls and roll in cinnamon sugar mixture to coat.  Place balls of dough 2 inches apart on an ungreased cookie sheet.  Bake for 10 to 11 minutes or until edges are beautifully golden.  Transfer cookies to a wire rack to cool.

    just get some bread sticks dip them in melted chocolate milk or white and then dip them in sprinkles or other small sweeties i love mini smarties on them!
