I was just wondering what you like to eat that's healthy but fast and easy. I'm always looking for healthy foods I can snack on and not feel guilty about later, haha.

  1. Strawberries

    They are great for a quick fix to craving sweets. They are the lowest calorie fruit too and are the second highest in antioxidants. Also if you are looking for a protein fix a spoonful of peanut butter is great! A handful of almonds are also one of the best snacks for you.  


  2. Chocolate stuffed french toast

    Ingredients:

    French bread

    chocolate chips or chunks/morsels/etc

    5 eggs

    1 C milk

    1 ts each cinnamon & vanilla

    The night before you want to serve this:

    Cut a loaf of French Bread into very thick slices. In each slice make a 3/4" cut to make a pocket. Spoon 2 heaping ts chocolate into the pocket. Close pocket with a pinch of the bread.

    Place into greased 9x13" baking dish. Mix up the eggs, milk & cinnamon/vanilla. Cover & refrigerate overnight.

    Preheat oven to 400F. Bake 20-25 minutes uncovered.

    Pancake S'mores

    1/3 cup graham cracker crumbs

    7 tablespoons marshmallow creme

    7 tablespoons milk chocolate chips

    Following your favorite pancake recipe::::

    Cook until bubbles break on surface. Sprinkle about 1 teaspoon graham cracker crumbs over each pancake. Turn; cook until golden. Remove from griddle.

    Spread about 1 tablespoon marshmallow creme over the crumbs side of each of 7 pancakes; sprinkle about 1 tablespoon chocolate chips over marshmallow creme on each. Top with another pancake, crumbs side down.

    Candy Bar French Toast

    12 slices day old bread

    3 Hersheys milk chocolate candy bars - no nuts

    3 eggs

    1 cup milk

    2 Tablespoons butter

    1 teaspoon sugar

    1 teaspoon vanilla extract

    1/4 teaspoon salt

    confectioner's sugar (for dusting at the end)

    Break each candy bar in half - the short way. Grate just a little chocolate (no more than a half teaspoon off of each piece and save in a small bowl for later.

    In a medium bowl, beat the eggs with the milk, sugar, vanilla, and salt. Pour half of this mixture into an large(13x9) ungreased baking dish.

    Layer six slices of bread horizontally over the egg mixture. Place one piece of candy bar in the center of each piece of bread. Top each slice with remaining pieces of bread like sandwiches. Pour the remaining egg mixture over the sandwiches. Let this stand for at least 5 minutes so the bread can absorb the egg mixture.

    On a griddle or in a large skillet, melt the butter over medium heat. Fry sandwiches until golden brown on both sides. Add an addition 2 teaspoons of butter mid-way, if cooking in batches.

    To serve, cut each sandwich diagonally. Dust with confectioner's sugar and sprinkle with chocolate shavings.

    10 cups popped corn

    1 cup pecan halves (toasted)

    1 cup whole almonds (unblanched, toasted)

    1 ⅓ cup brown sugar

    1 cup butter - no substitutes

    ½ cup light corn syrup

    ½ tsp. each of cream of tartar, baking soda and rum extract

    In a large bowl, combine the popcorn and nuts.

    In a heavy saucepan, combine the brown sugar, butter, corn syrup and cream of tartar

    Stir until sugar is dissolved. Cook without stirring over medium heat until candy thermometer reads 300-310°.

    Remove from heat Stir in baking soda and extract.

    Immediately pour over popcorn mixture. Toss gently.

    Spread into 2 greased 15 x 10 baking pans. Press gently to flatten.

    Cool completely. Break into pieces and store in airtight containers.Makes 2 quarts.

    Knead the dough with your hands adding 4 spoons of olive oil and 50 grams of sugar.     1/2 cup butter or margarine, soft

    1 1/2 cup firmly packed brown sugar

    1 egg

    1 teaspoon vanilla

    1 1/2 cup all-purpose flour

    1 1/2 teaspoon baking powder

    1/4 teaspoon salt

    1 cup raisins

    1 cup chopped walnuts

    Heat oven to 350 degrees F. Grease cookie sheets. Combine butter, brown sugar, egg, and vanilla; beat until light and fluffy. Stir in flour, baking powder and salt; mix well. Stir in raisins and walnuts.

    Drop by tablespoonfuls onto greased cookie sheets. Bake in upper third of oven at 350 degrees F for 10 to 12 minutes. Remove from cookie sheets; cool on wire racks. Makes 3 dozen cookies.

    guess chocolate doesn't count unless you count all those antioxidants they claim are in dark chocolate!

Pistachios are great!  At times they can be expensive, but Wal-Mart has a tub of them for about $3.50.  Also, I like to slice bananas strawberries and eat them together.  They are so good!  Just don't slice them and then put them in tupperware.  The bananas will turn brown.  You have to eat it right when you slice the fruit.  Any kind of bean is great!  My favorite is black beans.  Yummy!
