    Ingredients  

    1 cauliflower cut in florets

    4 Medium sized potatoes peeled and cubed

    3 tomatoes chopped

    1 tsp. cumin seeds

    1 tsp. garam Masala Ginger, fresh,

    1" 2 tsp. coriander powder

    3 garlic cloves

    1/4 c Oil

    3/4 tsp. turmeric

    1/2 tsp. red Chili Powder

    Salt

    cilantro (coriander) leaves to Garnish

    lime juice to taste.

    you can use tomato puree too

    Method:  

    1. Heat oil and sauté cumin seeds for about a minute. Add garlic and ginger, stir and add potatoes.

    Sauté the potatoes and then add turmeric, coriander powder and chili powder, and sauté again. Add tomatoes and simmer for about 5 minutes.

    Add cauliflower and garam masala and heat for about a minute.

    Lower heat, cover and let simmer for about 15 minutes. The vegetable dish should be steamed through and the potatoes and cauliflower should be soft and succulent after having soaked up the spices.

    Garnish with cilantro and season with a twist of fresh lime juice.

    Serve Hot with Roti's or Hot Rice.

  8. idli- 5 cups parboiled rice, 2 cups urud dal soaked overnight

    blend to a batter add salt.

    leave to ferment in room temp. 78 deg

    mix batter and ladle in idli pans and steam cook for 25 minutes.

  10. Spicy Indian Cream of Wheat

    1 cup cream of wheat (not instant)

    3 tbs oil

    ½ -1 tsp mustard seeds (or cumin)

    2 chilies, chopped

    5 or 6 curry leaves

    ½ cup onion, chopped

    ½ cup carrots, chopped

    ½ cup peas (add last)

    2-3 cups hot water

    2 tsp lemon juice

    2 tsp salt

    2 tsp sugar

    fresh cilantro, chopped

    Roast cream of wheat in dry pan until pinkish, about 10 min. Heat oil in another pan and add mustard seeds or cumin, take off heat and cover. Add chiles, curry leaves, onions, and carrots, fry. Add pre-roasted cream of wheat & slow roast until hot. Roast on medium for 5 minutes. Add 2 cups of hot water (no more than 3). Add lemon juice, salt, and sugar. Stir together. Add peas, lower flame, cover, and cook for 5-7 minutes. Add fresh cilantro. Any vegetables can be substituted, try whatever you like.
