i like mine deep fried...cut as the same size as crabsticks and freeze a raw tuna(preferably otoro,the fatty part)

prepare sushi rice, i add squid ink to it.just mix  it with the rice while the rice is still hot...

in the bamboo mat,place the nori,then the "black rice",lift it up and turn it up side down,place the frozen tuna stick,then some  green onions then roll it.then place another nori paper and roll everything.

deep it in flour,then whole beaten eggs then roll it in penko bread crumbs.deep fry till browned.it should be less than 20 seconds.

in a sauce pan,equal amounts of redwine,redwine vinegar,honey and slices of red onions.reduce untill you get a nice consistency.this is my dipping sauce. enjoy!
