  1. Baja Style Fish Taco's

    Easy and quick;

    Your favorite Salsa

    Your Favorite Battered Fish (get something very flavorfull)

    White Sauce;

    1/2 cup mayonnaise (or miracle whip)

    1/2 cup plain low fat yogurt

    1/3 cup chopped fresh cilantro

    For the cilantro, simply rinse it off, tear off the leaves and put them in a tea cup, and cut them with scissors in the cup until their pretty well minimized, just stick the scissors right down in there and snippety snip!

    You'll want fresh cabbage sliced thin...cheese and your sauce on a slightly warmed corn tortilla, then add your hot fish. YUM!

    These are delicious and go extremely well with chpis, salsa and ice cold Corona Beer.

    If you want home made salsa;

    1 whole garlic bulb (roast to paste, or grill and squash)

    2 chili peppers

    4 medium tomatoes

    1 med. yellow oninon

    1 tblsp lime

    1 tblsp lemon

    3 tblspn High quality flavored extra virgin olive oil (I use Sepay Tuscan)

    12 sprigs cilantro (snip snip!)

    1 can tomatoe sauce ( use hunts or contadina...not name brand junk)

    2 cans tomatoe puree or paste (again buy the good stuff)

    1/4 cup salt

    20 baggettes of Taco bell mild sauce (hey, it's free! Otherwise add chili powder, red pepper, and cumin to your tastes ~1tsp ea.)

    Chop onions tomatoes and peppers fine. Roast the garlic ahead of time in the oven with a roast or something, or, place the bulb in foil...add extra virgin olive oil on the top (cut the tip off) and add your favorite spices and grill it with the rest...you can do this in the broiler, just don't annihilate it!

    Now add all the ingrediants into a pot and bring to a boil while stirring. Let simmer about ten minutes and let cool on counter andtransfer to fridge when cool enough. This will taste way better than Picante or any other store bought sauce, and your friends will be begging for more...

    Enjoy!

  2. 1. Top it with some melted butter and sprinkle with cinnamon and sugar. Cut into wedges and bake until crispy.

    2. Spread a mixture of cream cheese and powdered sugar. Top with some fruit and roll up.

    3. Slice it into thin strips and bake till crispy. Add it to soups and salads. Yum!

  3. Burritos. Seasoned ground beef, refried beans, onion, tomatoes, lettuce, cheese and your favorite hot sauce and you can serve tacos or tostadas made with corn tortillas with the burritos.

  4. I put spanish rice and chicken in mine. Add some taco sauce and you are good to go. So good!

  5. Fried pies. Place a couple of spoonfuls of your favorite pie filling, roll in a burrito form. Keep closed with a toothpick and deep fry in a skillet or deep fryer until golden brown.

    Cinnamon Chips. Place sugar and cinnamon in a brown paper bag, shake together, set aside. Cut your flour tortillas in chip form. Place a handful of the tortilla pieces in hot fat and fry til golden brown. Drain on papertowel and then place in sugar bag. Shake, remove from bag and eat. After they are cool they can be bagged up.

  6. Along with taco meat (I just use one of those packets with ground beef), green olives, cheese, a little salsa, and lettuce. Yum :)

  7. I love putting grilled chicken, some torn romaine lettuce, shredded cheese, and salsa in a tortilla. One chicken breast is enough for two days worth of lunches!

  8. Mexican Roll Ups

    This is something I made up its a great way to use left over meat.

    Use one of your choice

    Shredded Chicken, shredded beef or shredded pork

    Put in skillet with 1 pkg of taco seasoning

    Add enough water so that you may simmer it, not to much

    After simmering like 20 min

    Place small amount in to soft burrito shell, I like to use the large ones.

    Roll them up and secure with toothpicks

    In deep fryer or skillet, brown til golden brown

    They will be crunchy

    Serve with sour cream, salsa or gucamole

    Dont forget to remove toothpicks !!!!

  9. Quesdialls with all the bell peppers and meats :)

    corn: pulled brisket, pico de gallo, sour cream (I usually fry the corn tortillas to get them soft and puffy)
