  1. Raspberry Freezer Jam....  it retains the natural taste of the berry better than the hot pack method.

  3. Strawberry preserves-

    last summer I made 2 varieties-- Strawberries with basalmic vinegar and cracked black pepper and Strawberry with a nice hit of lemon-- they were both great- but the lemon one was like opening a jar of summer on a cold winter morning.  The Basalmic went great with cheese and crackers too!!

Living in  Florida, figs are a great fruit for preserves, as well as oranges for marmalade...I make onlly enough to keep for a few weeks and not to shelve....1 cup fruit to l cup sugar...only enough water to cover....medium cooking and stirring constantly...cook 20 min...sit aside,l cover and cool...refrigerate...wonderful ..should not need any pectin or preservative....The oranges must be washed, deseeded  and put into food processor til fine, rind, meat and juice...figs need stems removed, cut up finely and cook.....
