I use zip-lock baggies and have no problem with them going stale.  Just push down a little to get all the air out before you seal it.  Foil doesn't keep the air out well enough; and moisture can seep into foil or saran-wrapped sandwiches, if you refrigerate them.......

None.  Always use plastic wrap or alum. foil that touches the bread.  The air in a baggie (of any kind) can make the bread go stale.  Wrap it tightly.  It should keep for 3 days if wrapped tight enough.
