A minor in cultural anthropology fits right in with international studies. You could use it to demonstrate an interest and background in multicultural issues--a hot topic these days. It also would show that you have an understanding of other ways of life/cultural beliefs and practices and won't, for example, put your feet up on the bus when traveling in Thailand (because you'll understand that that would be a grave insult).
