  3. They eat a lot of rice and yogurt. I used to be a nanny for Indian girls and I had to feed them. Usually it was heating up rice with a type of meat, and mixing in plain yogurt.

  4. I doubt there's any straight answer to this question - Wikipedia says there are 22 official languages, so its probably at least that many individual cuisines.

Indian food in the US is a whole different story, since most of that boils down to Northern (from the Mughal era, bordering Middle Eastern cuisine) and Southern (represented mostly by fast food vegetarian eats, serving "dosa", "idli", savory snacks, etc).

Being a tropical country, most of the food is based on rice / wheat as the staple. Beans, legumes and vegetables are usually come second. Meats may or may not follow, depending on regional culture.

If you intend to cook, http://www.sanjeevkapoor.com/ is a good starting point for some recipies. Among books, ones by Madhur Jaffrey are equally good starting points.

  5. a lot of spicy hot curries, mostly vegetarian. sometimes we make curry chicken. lots of rice in our food, and we eat a lot of flat or puffed up breads like naan, chapati, puri, etc...lots of yogurt sauces, we call raita, mix with cucumbers. main dishes vary on state and region of Indiia. Punjab uses more chickpeas (chana) and panir (homemade cheese) and the curry dishes are more creamy and saucy. Gujrati dishes are more dry and use a lot of oils, and ghee (butter)...Gujrati food is more sweet mixed with spicy...Gujrati food is mostly vegetarian. Punjab uses more chicken, Bengal and the south eat more fish. north indiian food is noted for the spicy hot curries, and more non veg dishes....while in the south, is more vegetarian, and eat dosa (lentil crepes) stuffed with potatoes, onions, and a lot of spices...lots of lentils in Indian food, dal (lentil) soup is very popular in Indiia. lots of fried appetizers, like pakoras, samosas, and potato bondas which we eat with spicy hot pickles and sweet/sour chutney dips. the drinks are very sweet, either juices or a sweet or salty yogurt shake we call lassi. our sweets are very sweet, like rich homemade fudge (barfi) with a lot of nuts or gulab jamun (creamy dough balls, deep fried, than soaked in a rich sugar syrup). Indian food is very good, some healthy, and if u like spicy food, try Indian food!!!

  6. The best!!

Not only in India.  I had some great South Indian cuisine in Dubai a few years ago.

I've just had lunch but the thought of Indian food is making me hungry!
