  1. for a crispy crunchy bread stick it's all purpose, for real bread you want a flour with a protein content of about 11.5%, bread flour is too high at about 13% and all purpose is too low, but a half and half mix used in bread baking works best for me. Also if you know how to make a starter for the bread you would be better off.

    Look into buying a book on bread and flour as the basics of flour is very in depth and a vast topic to get into.  


  2. Bread flour,

    known in bakeries as hard flour made from winter wheat.

    It has a high content of gluten which is the protein in flour. Gluten when kneaded or developed allows the bread dough to have elasticity.

    Bread sticks will probably have less fat or shortening so it will be a tougher/ harder dough. The more fat the more moist the bread will be.
