Hi i am planning of making something different so if you have any ideas then could you give me the recipe thanks .x :)

  1. hi there, i made a REALLY awesome eggplant parmesan recently & it was very easy, i didn't even really use a recipe! peel & slice some eggplant, salt & let drain in a colander. beat a few eggs with a bit of water & put in a shallow dish; mix seasoned bread crumbs with some parmesan cheese from a shaker & put in a shallow dish. pour some vegetable oil into a skillet, about 1/2 inch deep, & heat on high. take a slice of eggplant (you might need to squeeze a little more water out with a paper towel), dip in the egg wash & roll in bread crumb mix til covered, & fry til golden brown on both sides; drain on paper towels. when you've fried all the eggplant, in a baking dish, layer eggplant slices, tomato sauce, & lots of mozzarella cheese (2 or 3 layers is good), & bake at like 375 until cheese is melted. it's SO GOOD! :-D

    i served it over pasta with salad & garlic bread on the side.


  2. Oh my gosh!!!!  The first time I made this dish I fell in love with it.  It is so scrumptious.  Don't let the name intimidate you.  It is, by far, the best trout I've ever had.  Serve with some sauteed green beans and rice pilaf, you will have the perfect supper.

    GALATOIRE'S TROUT MEUNIERE AMANDINE

    3 cups sliced almonds

    2 large eggs

    1 pint whole milk

    Salt and freshly ground black pepper, to taste

    6 (7- to 8-ounce) speckled trout fillets

    2 cups all-purpose flour

    1 gallon vegetable oil

    Meuniere sauce (recipe below)

    3 medium lemons cut into wedges

    Yields 6 servings.

    Preheat oven to 300 F.

    Place almonds on a baking sheet and toast in oven for 15 to 20 minutes, opening oven to stir almonds every 5 minutes while they cook. When they become a light golden brown, remove from oven and set aside.

    Make a wash by whisking together eggs and milk in shallow bowl. Season with salt and pepper, to taste.

    Season fillets with salt and pepper, to taste, and dust with flour.

    Submerge floured fillets in egg wash. Gently remove fillets from egg wash and allow excess to drip off. Put fillets back into flour, and then gently shake off excess flour.

    In a large, heavy-bottomed pot, heat oil to 350 F. Test readiness of oil by sprinkling a pinch of flour over it. Flour will brown instantly when oil has reached correct temperature. Add trout and fry for 4 to 5 minutes. Remove fish when crust is golden brown.

    Top each fillet with almonds and warmed meuniere sauce (recipe below). Garnish with lemon wedges.

    MEUNIERE SAUCE

    1 pound salted butter

    1 tablespoon fresh lemon juice

    1 tablespoon red wine vinegar

    Yields 2 cups.

    In medium saucepan over medium heat, melt butter, whisking constantly, for 8 to 10 minutes, until sediment in butter turns dark brown, almost (but not quite) to the point of burning, and liquid is deep golden color. Remove pan from heat and continue to whisk slowly, adding lemon juice and vinegar to browned butter. Sauce will froth until acids have evaporated. When frothing subsides, sauce is complete.

    4 Tortillas

    2 Chicken fillets

    2 cups Brown bread Flour

    1 ½ Teaspoon Pepper

    3 Hands full Cornflakes Crushed

    1 Teaspoon Aromat

    ½ cup oil

    1 Tomato chopped

    Lettuce chopped

    Gherkins Chopped

    Tomato chutney

    Mayonnaise

    Grated Cheese of your choice

    Mix Brown bread flour, Pepper, Crushed cornflakes and Aromat together in a mixing bowl. Heat oil in a pan,<- medium heat, Slice the Chicken fillets in strips and put in water, Fillets must be VERY wet don’t shake off water before rolling in flour mix!!!, Take fillets out of the water one for one and roll chicken strips in flour mix until strips is fully covered in flour mix. Place the strips in the pan with preheated oil and fry till brown and crispy. Place in strainer 2 drain excess oil from strips.  Place Tortillas on plates; Mix Mayonnaise and Tomato Chutney together spread on Tortilla place chopped Tomatoes, Lettuce and Gherkins on Tortilla. Take Chicken strips and place on Tortilla sprinkle grated cheese over chicken strips and fold the Tortilla close!
