What Treats Can I Make With Cranberries?

I need a muffin or cake sort of dessert thats main ingredients are cranberries. I also have sliced almonds.I have all the other usual ingredients too. Flour,sugar,baking powder, ect. But I do not have any powdered sugar, so I can't really prepare anything with a frosting/icing.

P.S the cranberries are dried, but i can make them like fresh by soaking them in water. So anything that calls for a cranberries to be decorative and not actually part of the dessert, wouldnt look nice.

  1. My mom has made this recipe for over 35 years.

    Grandmother's Famous Cranberry Bread

    2 c. flour

    1 c. sugar

    1 ½ t. baking powder

    1 t. salt

    ½ t. soda

    ¼ c. butter

    1 egg, beaten

    1 t. grated orange peel (optional)

    ¾ c. orange juice

    1 ½ c. light raisins

    1 ½ c. fresh or frozen cranberries, chopped

    Combine flour, sugar, baking powder, salt, & soda.  Cut in butter until mixture is crumbly.  Add egg, orange peel, and orange juice - all at once.

    Stir just until mixture is evenly moist.  Fold in raisins & cranberries.  Spoon into greased 9x5x3 loaf pan.  Bake at 350° for 1 hour and 10 minutes or until done.  Remove from pan.  Cool on a wire rack.

    If you choose, you may substitute cranberries for raisins to have an all-cranberry bread.

    Everyone who eats this thinks it's wonderful.  Hope you do, too.

    Cranberry Salad

    Grind: 1 large pkg. cranberries

    1 large apple

    1 large orange

    Add:  Large can crushed pineapple (NOT drained) and 1 ½ c. sugar.  Let stand overnight.

    Drain well and fold in 1 qt. Cool Whip.

    This is a large batch.  Mix just half fruit with half Cool Whip for a smaller batch.

  3. You can make a dark chocolate and cranberry cake or mousse, or sweeten them up to make a jam like for a trifle, or a cranberry fool, or even a pie or crumble. =]

  4. Cranberry Upside-down Cake

    4 ounces butter, plus 8 ounces

    1/2 cup light brown sugar

    1/4 cup cranberry juice

    1/2 teaspoon ground cinnamon

    1/4 teaspoon ground allspice

    1/4 teaspoon ground cloves

    2 cups fresh or quick frozen cranberries

    8 ounces butter

    1 cup milk

    1 egg

    1 1/2 cups flour

    2 teaspoons baking powder

    1/2 teaspoon salt

    1/2 cup sugar

    Serving suggestion: Whipped cream or ice cream

    Preheat oven to 400 degrees F.

    Melt the 4 ounces of butter in a nonstick, ovenproof 9-inch skillet. Add the brown sugar, juice and spices and stir until sugar dissolves and liquid is bubbly. Chill mixture, add the cranberries, and set aside.

    In a small pan, melt 8 ounces of butter. Remove from the heat and add the milk and egg. Set aside.

    In a separate bowl, mix the flour, baking powder, salt, and sugar. Add the milk mixture and whisk until smooth. Pour this mixture over the cranberries in the skillet. Bake for 30 to 35 minutes, until a toothpick comes out clean.

    Let cake cool in pan for about 15 minutes then turn out onto plate (fruit will be on top and juice will be dripping down) and serve slices with whipped cream or vanilla ice cream.
