  1. You should probably know about lenses if you're going to go into business...

Anyways, like the previous poster said, there is no answer to this question. What lenses you should get depends on your needs. However, if you're just looking to cover the basics you should probably have a wide angle lens (17-55mm or so), a telephoto (70-200mm or 70-300mm) and a portrait lens (50mm). You may also want a macro depending on what you're doing. Additionally, you may want a "walk-around" lens that will cover some common focal lengths so that you don't have to change lenses often. Something with along the lines of 28-135mm would be good.

As the previous poster said, get the 'L' series if you can afford it.

  2. There is no answer to this question. There are hundreds of lenses available and each one is useful for something. If you need to "do everything" as you say, they you will need every lens...well, nearly every lens.

Since this is a business, I will recommend you only by L class lenses. They cost quite a bit more than the cheapies but the quality is obvious and they will last far longer under heavy use.

Bare minimum, you should have 3 or more zooms to cover about 10mm to 300mm. Better yet, would be a collection of fast (lower f number) primes (non zooms) spread throughout that range.

Not knowing how much you know about the subject, I will just remind you that aperture is key. Don't skimp and go for a bunch of junky 3.5s (or worse, 5.6). Once I got my first 1.8 I started selling off my cheap glass and blowing paycheck after paycheck on faster replacements. It's addicting!
