Templeton the rat in Charlotte's Web was sarcastic, but I don't know if that applies to all rats.  Garfield the cat is certainly sarcastic, too.

I'll have to say cats. We always tend to attach human traits to animals, and judge animal behavior according to acceptable characteristics of ourselves - which is not accurate in the animal world. Anyway, the cat seems to mock our emotions with disregard - bordering sarcasm.
