What are Chitlins? And do only Black people eat it?

pig intestines , black folks do eat them but  not all , blacks eat them . I do know of some whites that eat them , but , not a lot of them . Chtlins came about in the black society , during the slave era . That was the only part of the pig the white slave owners wouldn't eat . The slaves made it and molded it into their own delicacy and , that is why it is associated with blacks .I had lived in a black community when I was younger (in the 60's ) and around the holidays , is when you  smelled the chitlins . God Awful (LOL) Even my black friends couldn't stand the smell . But , their parents would say that when you smelled that smell , good eating was behind the door and big bellies wasn't far behind !

cow intestine, you don't have to be black to eat  it if you have money to buy it.  Its very costly.

boil until tender and drain out water let it dry

get all the fat out

marinate with chop garlic, oyster sauce, salt and msg (monosodium glonmate in Kroger grocery stores) and now grill it over charcoal

Chitlins are prepared pig's intestines, and you would not think that the word would have an English origin, but it does. Traditionallly, the English ate all parts of the pig, including, yes, the intestines. I think the dish orignated in Virginia and in Maryland, where the English first settled in the South. Lots of people eat chitlins, not just African Americans.

In the Philippines, chitlins are fried until crispy and served as appetizer. They are especially favored by men who drink after working hours. When fried crisp, they are called chicharon, the same term used for crisp pork rind. Chicharon is dipped in vinegar with garlic and lots of hot chili peppers.

But that is not the only use for chitlins in my country. Pir instestines and stomach, wlong with all the other innards (liver, spleen, kidneys, heart, lungs) are stewed with vinegar, lots of garlic, chili and pigs blood. The resulting thick stew is called Dinuguan (literally means BLOODY). This stew is great for breakfast or midday snack with a sweetish steamed rice cake called p**o.

chitlins as some blacks refer to them is pig intestines, hog mog is pig stomach, both taste good with ketchup or hot sauce or babecue sauce. but the smell of it cooking is awful. but you get used to it when you grow up with a mom that cooks it on a semi regular basis. we cooked it by boiling it . someone said they deep fried it.  it has a rubbery texture but not much of a taste in my opinion, that is why we add the hot  sauce or ketchup. its a southern delicacy most soul food is southern food and both blacks and whites enjoy southern food. remember in hawiian islands they roast the whole hog and eat the whole hog, even the brains and head. haven't you ever had brains and eggs before? I have but I didn't like it because it has tiny little bones in it. or hog head cheese, i don't like that either because it is too spicey. even hot dogs contain scraps of the pig that is left over.  the pig is one animal that is not wasted.

Chitlin (chiterlings, chitlings) are hog intestines that have been thoroughly cleaned and then deep-fried until they are very crispy and puffy.  They are a Southern specialty, not a food specifically associated with black or white.
