What are anticuchos made of? Travelling to Peru and would like to know.?

This question was posted by another person (a lady) weeks ago. Well, here is the answer. They are mainly made of the cow's heart. These are called anticuhos de corazon and they are really delicious. The meat is chopped and marinated in a very spicy sort of paste/juice made from many chilis and spices (achiote) and then cooked slowly on a bbq. There are people who like the flavour of the marinated meat but will not eat a cow's heart  so there are also anticuchos made of sirloin (anticuchos de lomo) and even from chicken, etc.
