  1. The main cultural staple of Christmas in Costa Rica is the 'tamal', which is made with a fine corn flour, pork fat, spices, vegetables, and chunks of pork for filling.

    Tamales can also be made with other fillings. For example they can be made with chicken, refried black beans (frijoles molidos), or they can be "mudos", which means that it has no filling.

    Anyway, they are boiled wrapped in banana leaves and are often served, as well as bought and sold, by the pair (in Costa  Rica "piña".

    Tamales is to Costa Rican Christmas as turkey is to American Thanksgiving. ¿Entiendes?
