What are good leafy greens for vegetarian soup?

I like to make soups with lots of beans and veggies, and I'd like to add some leafy greens but I am a bit nervous, because I know some leafy greens are very bitter. Any suggestions or recipes?

  1. Spinach is great, just wash it well first.  It only takes a couple of minutes to cook, so add it in last.

    Also cabbage, it takes a little longer to cook.

    My daughter is a vegetarian and we make all kinds of things with spinach and black beans, those are our favorites.


  2. try kale, it is not bitter just cut off the thick stocky bit at the end. it is used a lot in IT cooking.

  3. Kale greens in a Black Eye Pea soup.

    Simple:

    Black Eye Pea

    Kale

    Veggie Broth

    White Balsamic Vinegar

    Allspice

    Thyme

    Fresh Tomato

    Onion

    Garlic

    Pretty much stir fry all the veggies for a few, then add broth/touch of Vinegar and spice (salt & pepper is good too).

    Yummy!

  4. Kale. Kale, kale, kale...mmm...and Josh M.'s recipe sounds GOOOOOD!!! =0) I love kale AND black eye peas.

  5. Kale, Collard Greens (my favorite) and spinach would make excellent ingredients for soups! They are not bitter, they cook quickly and are very nutritious. I would suggest especially for the collard greens and kale, chopping them up to bite size pieces. Good luck!
