  1. I like angel hair pasta with a little butter and Parmesan cheese.  You can always throw some tomatoes, yellow squash on top.

    Homemade veggie burgers.  I make them in bulk and freeze the patties so I can quickly take them out and cook.  There are an endless number of recipes online that are either soy based, bean based, or nuts/grain based.

    Salad with sliced apple, walnuts, sliced pear, and some grilled pita on the side.

    I like to also use pita and stuff it with a tofu mixture- I fry small chunks of tofu with tomatoes, seasoning, onion, green peppers, and stuff it in a pita.  You can obviously add whatever else you want.

    Buying frozen pizza dough from the grocery store(usually under $1 for a ball that makes a medium-largish pizza) and top with cheese, tomato/pizza sauce (super cheap) and any veggies you like.

    Here are some good recipes:

    Stir fry- You need cut up tofu, soy sauce, olive oil, steamed veggies, and cooked rice

    Get a frying pan and coat it with olive oil. The put the tofu in the pan and brown each side of it. Next, add the veggies. Add a little soy sauce and put in the rice. Mix everything up and then let it sit on the stove, occasionally stirring it to make sure it doesn't burn. After about a minute and a half of that put it in a bowl and enjoy!

    Hummus- chick peas, lemon juice, paprika, cumin, black pepper, and any other spices/seasonings you like

    Puree the chick peas. Then add a little lemon juice, paprika, pepper, and other spices. Then stir. Serve with a pita, with cucumbers, or on a veggie wrap.

    Whole foods is a great store for vegetarians/vegans, so I recommend grocery shopping there. You also can get a lot of the things I listed above there.

  6. You can throw together a burrito or enchilada in a few minutes: just put some black beans, cheese, chopped tomatoes and lettuce in a tortilla and microwave!

  7. I would say a stir fry. You can put all kinds of things in them and use different sauces in them. I don't eat meat and I live off sandwiches,salads, tomato soup, stir fries and pasta salads.

  8. this is what my family had last night....

    1 pkg extra firm tofu

    2 tbls olive oil

    1 - 16 oz package frozen stir-fry vegetables

    veg stock

    your favorite spices

    drain tofu, press between paper towels to remove excess water.  Cut up in bite size and pan fry in olive oil for about 15 min.  Then add frozen vegetables with a splash of the veg stock (1/4 cup) at this time i also add some additional spices so the tofu will soak it up.  Really depends on  what we are in the mood for... some times I add some peppers or a little soy your choice.  I cook it for just a few min.. don't want the veg to get too soft...

    this is a pretty cheap and filling meal for the summer... some times I skip the frozen vegetables and put fresh ones in instead only takes a few min from start to finish.

    If you want to add some more substance to the meal you can always serve over rice or add some cooked pasta at the same time you add the vegetables.
