Edinburgh's a very touristy city, so there's tons to see and do.  If you're coming before the end of the month, the biggie is the Festival.

How long are you in town for?  I recommend a tour of the city first thing, either a walking tour (New Europe does a free walking tour) or a bus tour (around £10 for the 24-hr hop on hop off tickets) to get oriented in the city.  

If you've only got a couple of days, the Castle, Holyrood Palace and Arthur's Seat are the biggies.  Princes Street Gardens are beautiful to walk though, and if you're lucky enough for some sunshine, walking along the beach in Portobello is a must-do, IMO.  If you've got a few more days, I'd skip Edinburgh Castle and take a day-trip to Stirling.
