Generally concrete in my area (Yucatan State). In the smaller villages you may find a traditional oval shaped Mayan house built of wood and thatch. Though sometimes the thatch has been replaced by a more modern material or the walls may be stone. The link below has some info and a picture of a traditional Mayan home.

In Mexico, most houses are made of concrete and rebar and brick and tile, mostly because there is much more of that than pine two by fours to build in the style of the United States.
