What are my rights as to the car insurance claim process?

My situation: 2003 Hyundai Santa Fe 4 cyl 40,700miles purchased:2/17/2007 for 11,000.00 put 5000.00 down

As far as I know,insurance only has to pay what the book value of the car is. Doesn't matter how much you owe on it or how much you paid for it. This is the way it has always worked for me when I had accident damage.
