Well, everything seems cute in mini size, but what else would be some foods that would be especially cute in mini size?

(Like donuts, pies, cupcakes, sushi, ice cream. Don't mention those.)

  1. CHICKEN IN A SLEEPING BAG



    2 (8-oz.) cans Pillsbury Refrigerated Crescent Dinner Rolls

    8 (1-oz.) slices cooked ham

    8 (3/4-oz.) slices Swiss pasteurized process cheese food, unwrapped

    16 frozen breaded wing-shape chicken patties, slightly thawed

    Heat oven to 375F. Separate dough into 8 (4 x 7 1/2 inch) rectangles; firmly press perforations to seal.

    For each sandwich, place 1 rectangle of dough on ungreased cookie sheet. Top with 1 slice of ham. Place cheese at one end of ham slice. Place 2 chicken patties on cheese. Fold 2/3 of dough over chicken, leaving about 1 1/2 inches of chicken uncovered. Press sides of sandwich with fork to seal edges.

    Bake at 375F. for 15 to 17 minutes or until crust is golden brown and chicken is hot.

  3. I think mini-sandwiches are cute, clever, and everyone has seemed to like them whenever I've made them.

    If you have canape or mini-cookie cutters, make several different kinds of sandwiches and cut them into little shapes.

    This way, people might try a little bite of a sandwich they may not have thought to try before.

    Prep Time: 35 min ; Start to Finish: 1 hr 5 min  

    Makes: 20 snacks  Nutrition Information

    Pretzel Butterflies are not only a tasty treat, but also a terrific project to bring out the creativity in kids of all ages.

    2 cups small pretzel twists (about 45)

    1/2 cup white vanilla baking chips or 2 oz vanilla-flavored candy coating, cut into pieces

    1/2 teaspoon vegetable oil

    1/3 cup small round candy-coated fruit-flavored chewy candies (from 4-oz bag)

    1 .   Line large cookie sheet with waxed paper or cooking parchment paper. To make 20 butterflies, arrange pretzel twists on cookie sheet in groups of 2 with single-hole sides of pretzels touching to form butterfly wings (see diagram). Break remaining 5 pretzels into pieces for antennae; place 2 pieces at top of each butterfly between wings.

    2 .   In 1-quart resealable freezer plastic bag, place vanilla chips and oil. Microwave on High 1 minute 20 seconds or until melted, squeezing bag to mix. Seal bag; cut small hole in 1 corner of bag.

    3 .   Squeeze bag to pipe thin zigzag of melted chips between pretzels to look like bodies of butterflies. Press pretzel pieces firmly into melted chips.

    Pipe melted chips into each hole in wings; top each with 1 candy. Let stand until set, about 30 minutes.

    Remove from waxed paper; store in tightly covered container.

  10. What are you needing this for?  Depending on the need, you can do just about ANYTHING miniature.

    One of my favorites for dinner parties is mini meatloaves!  They're different from the standard meatballs because they're a little bigger, and they're shaped and cooked differently.  You can either shape them by hand or else use small loaf pans (you can find them in most kitchen stores).

    You can also do what I call "4-Bite Sheperd's Pie" (puff pastry, corn, ground beef, mashed potatoes and cheese) in muffin cups.  Cook the ground beef with diced onions, salt and pepper.  DRAIN WELL.  Line each muffin cup with a small square of puff pastry and bake per the directions (you can sometimes find these pre-made in your frozen food section, but smaller than a standard muffin cup...in which case, these are "2-Bite").  Layer the remaining ingredients in the above order, then bake just long enough to heat throughout and melt the cheese on top.  Let them cool a bit before you serve them, or they'll just fall apart.

    As for dessert, mini cream puffs or eclairs are always a good way to go.  You could also get mini cannolis from most grocery stores...YUM!  If you want to get creative with the cannoli filling or toppings, you can purchase just the cannoli shells.  Dip the shells in chocolate and add crushed pistachios or toffee.
