What are some Latin American dishes under these catagories, and what are they made of?

So I have this Spanish project and I need to do a menu of Latin American dishes one would find in a Latin restauraunt. I must have at least 5 dishes in each catagory. I also need to write under them what they are made of. For example, Arroz con pollo would be a spicy rice dish with roasted chicken or whatever.

I'm not asking for all the dishes, but some suggestions would be nice. So the catagories are:

Apps - Guacamole (avocado), Quesadilla (tortilla and cheese)

Meat/Fish - Paella (saffron rice, shellfish and chorizo), Fajitas (grilled meat, peppers and onions), Ceviche (raw fish and citrus juice), Enchiladas (corn tortillas, meat, cheese, enchilada sauce)

Drinks - Mojito (white rum, mint and sugar), Margarita (tequila, lime, triple sec)

Dessert - Flan (caramel custard)

Drink-mate. it's a caffeinated drink of some sort (from brazil/argentina/uruguay)

empanadas- a kind of pastry, filled with meat or dulce de leche

dessert-dulce de leche. south american obsession. of dairy and it's a dessert filling.

asado- barbecue. Uruguay has the world's largest barbecue ^.^

drink.. my favorite is agua de jamica which is hibiscus petals in water...almost like kool-aid but better and good for ur body.. so its just water, as much sugar u want in the water and let the petals bath until the water is dark blood red...

chile con carne is also. good or mole....MMMmmm.... mole... d**n im hungry now... PUES SUERTE CON TU PROYECTO...

soups: san cocho, sopa marinero,tortilla soup, black bean soup,sopa de quinoa.

meat: seco de chivo;chicharonnes,cuy(guniea pig),papas con cuero(pig skin and potatoes)

dairy: figs with queso, balon(fried plaintains mashed with cheese and refried,from the coast of ecuador)
