What are some Papua New Guinea Recipes?

I have a project where I have to make a food item from a certain country and I was given Papua New Guinea. ANy ideas or links would be greatly appreciated. Thanks!

  1. These are fairly easy:  just stay away from any recipes with the words "flying foxes" (aka bats!), yes they eat them!

    PNG COCONUT RICE

    2 cups rice

    1 cup coconut cream

    1 cup water

    Add rice and water. Heat to a boil. Let it low boil for about 5 minutes being careful not to let the liquid boil over. Put top on pot, remove from heat, let sit without stirring for 10-15 minutes.

    There are a few variations on this that can make really nice side dishes. Add crushed garlic, finely chopped ginger, curry, mixed with mashed squash, cut some green onions or chives and place on top when cooked, or anything else you can think of...

    SWEET POTATO CRISPS

    1). Wash and peel your sweet potatoes

    2). Slice thinly

    3). Soak in water to remove starch (Maybe 1 to 2 hours)

    4). Dry slices on paper

    5). Deep fry until crisp

    6). Drain excess oil on paper towel

    7). Sprinkle with salt

    A good variation on this is to use green eating bananas (These are the same bananas that turn yellow and you eat them in the morning) but get them when they are really green. You can also use plantains which are specifically used for cooking (or any other cooking banana). Peel, slice and fry. Dip them in your favorite sauce.

  2. Baked Sweet Potato

    3 Cups mashed Sweet Potato or Kau Kau

    3 Tablespoons butter

    3 Tablespoons finely sliced onions

    3 eggs

    ½ teaspoon ground cinnamon

    1 Tablespoon milk

    salt and pepper to taste.

    After mashing the cooked sweet potato,

    mix in the butter, onion, milk,

    cinnamon, salt and pepper.

    Separate the egg whites from the yolks.

    Beat them separately.

    Fold the egg yolks into the mashed potato

    followed by the egg whites.

    Place mixture in a greased baking dish.

    Brush the top with butter and bake

    in the oven with the dish placed in a

    pan of water for 35 to 40 minutes at

    160 degrees Celsius.

    (325 degrees Fahrenheit)

  3. Chicken and Vegetables

    butter for browning

    1 chicken cut into serving pieces

    1 coconut for cream

    enough vegetables to serve 6 people:

    onions, etc.

    tapioca, yam, banana, pumpkin, kauhau,

    1. Brown the chicken in a little butter in a heavy frying pan (electric if

    you have one).

    2. Add peeled, washed and chopped vegetables to frying pan.

    3. Cover with coconut cream.

    4. Add a little salt, chopped onions and any seasoning to taste.

    5. Cover and cook slowly until vegetables are tender, about half an hour.
