What are some Quick and Easy PUERTO RICAN recipes?

Something really easy; I don't like to cook and I don't want to run off to the grocery store on a wild goose chase for some weird ingredients I have never heard of.

What are some easy Puerto Rican recipes, maybe using plantain or dessert recipes.

I would really appreciate it.

Please don't give me a link to some lame site that has hard recipes, I want to hear recipes from real Puerto Ricans or people who can cook Puerto Rican food well.

  1. Wow there are so many good recipes, but you want something easy , how about frying riped plantains,  that taste good as a side dish.

    Fried Green Plantains (Tostones)

    Ingredients:

    2 plantains (green)

    2 cups canola oil

    Salt, add to taste

    In a large frying pan or deep fryer,

    heat the oil. In a separate plate, peel and cut the plantains into one inch rounds. Place them in the hot oil and cook for about 3 minutes while turning. Remove from oil and pat dry with a paper towel. Place each round inside a sandwich bag and smash it with the bottom of a bottle or with a "tostonera". Put them back in the hot oil for about 3 minutes turning until golden brown on both sides. Remove from oil and pat dry with a paper towel. Add salt to taste.

    Champola de Guanabana

    Ingredients



    1 1/2 pounds sour sop pulp

    3-4 cups cold milk

    1/2 cup sugar (to taste)

    Ground nutmeg for garnish

    Ice cubes



    Directions

    Peel, seed and cut the fruit into chunks. Puree in blender using some of the milk. Press through a colander (if desired)to eliminate any fibers. Return to blender and blend with the rest of the ingredients. You may add more milk if you want it thinner. Serve cold over crushed ice.



    TIPS:

    To freeze the guanabana:

    Peel, cut lengthwise through center and remove all core. Remove seeds, and puree the flesh. Add 1 cup of sugar to 6 cups of puree. Pack in an airtight container like "Tupperware" and label.

    The puree will be slightly thick, and is excellent in making beverages, sherbet and ice cream. The flavor blends well with bananas and pineapple. It is most desirable to prepare as a puree, the sliced fruit when frozen will be coarse in texture.

  3. PUERTO RICAN AVOCADO SHRIMP BOAT  

    2 lg. ripe avocados

    Lemon juice

    2 med. tomatoes

    1 tsp. sugar

    1/2 tsp. salt

    Pepper to taste

    1/8 tsp. ground turmeric

    1 tsp. chopped parsley

    2 green onions, minced

    Sprig fresh mint, chopped fine

    1/2 tsp. cider vinegar

    1/2 tsp. water

    Dash of cayenne pepper

    2 tbsp. French dressing

    1 c. cooked shrimps

    Watercress

    Halve avocado and remove seeds. Scoop out pulp and dice. Put shell with lemon juice and set aside. Peel and chop tomatoes. Mix all remaining ingredients except shrimp and watercress. Pour over tomato and avocado pieces, mix carefully. Fold in shrimp. Pile mixture in avocado shells, top with water cress, sprigs and chill. Makes 4 servings

    OR

    PUERTO RICAN DINNER  

    1 lb. med. or hot sausage

    1 lb. kielbasa (beef)

    1 lb. bacon

    Cook all meat and pour off excess fat. Add: 2 bell peppers 1 tbsp. oregano

    Prepare pinto beans as usual, rice as usual. After pinto beans and rice are done, pour mixture into pinto beans and simmer. Pour mixture over rice and enjoy



    OR

    PUERTO RICAN BEANS  

    1 lb. kidney or pinto beans

    1/3 c. Sofrito (recipe follows)

    1 (8 oz.) can tomato sauce

    2 tsp. bacon drippings

    Salt to taste

    Water

    Soak beans overnight. If using canned, drain liquid.

    In medium saucepan, combine first 4 ingredients. Add water just to cover beans. Salt to taste. Bring mixture to a boil and cook over medium heat until liquid is of sauce consistency. If necessary, add more water as beans are cooking.



    OR

    PUERTO RICAN PORK CHOPS  

    6 pork chops

    2 chopped onions

    1 c. chopped tomatoes

    1 c. water

    4 tbsp. butter

    2 chopped green peppers

    1/2 c. uncooked rice

    Salt to taste

    Fry pork chops that have been rolled in flour, in butter. Add chopped onions and brown. Add other ingredients. Cover and cook for 60-70 minutes in a 350 degree oven.

    you can hit me up anytime.  i'm working now on opening my own retaurant.   as far as easy goes, the recipies are easy but they do require certain things to make them right.

    for tostones ( fried banana chips)

    some bananas

    some flour

    cooking oil

    take the bananas and mash them up

    make some patties out of them( usually no bigger than the palm of your hand so they won't break and try to make them consistently the same size to make the cooking process easy)

    pad them on both sides with flour and fry them until they're just brown

    place them in a bowl lined with paper towel to absorb excess oil and enjoy

    if you really want to make something, make arroz con gandules  ( puerto rican rice)

  6. There is always Arroz Con Pollo (chicken and rice) simple ingredients and simple preparation. Something kinda different and fun would be "Jamon Y Plantanos" Ham and Bananas. Thick sliced ham sprinkled with coconut and sugar, lay banana slices on top with lime and orange juice, shake on some cinnamon and butter, then bake 20min 375. simple..
