Stick with the real spelling. It's not that uncommon of a word, since most people would have heard it from Cirque de Soleil or the razors, so there's no use confusing them more by coming up with some odd spelling. It's a gorgeous name as it is.

Solay (jkjk). Soleil is fine, people will know how to pronounce it. Who hasn't heard of cirque du soleil?

The only thing I can come up with is Solay.  Then the name loses its beauty to me (reminds me of Frito-Lay).
