Question:

What are some creative dessert recipes to use since I have 4 days left to use a gallon & 1/2 of milk?

Thursday was the 7th. That's when I bought the milk. Today is the 10th. I usually eat cereal for breakfast, but now I don't have any more cereal to eat. LOL I need to use the milk up in 4 days. I bought it from the gas station across the street since I didn't have a way to get to WalMart. That's why the due date is so soon. Also, I want to expand my cooking creativity.

  1. 1/4th cup long grain rice (washed and drained)

    All the milk you have (gallon n 1/2)

    2-3 cardamom seeds (crushed)

    2 tbsp almonds (blanched silvered)

    A pinch of saffron threads, soaked in a little hot milk

    1 tbsp skinned pistachio nuts (chopped)

    1 tbsp raisins (optional)

    2-3 tbsp sugar or as desired

    Put the rice, milk and cardamom in a pan, bring to boil and simmer gently until the rice is soft and the grains are starting to break up.

    Add almonds, pistachio, saffron and raisins and simmer for 3-4 minutes.

    Add the sugar and stir until completely dissolved.

    Remove the rice kheer from heat and serve either warm or chilled.

    This is an Indian Dessert.Hope u like it!


  2. Brownie Pudding Cake Recipe



    1 cup all-purpose flour

    2/3 cup unsweetened cocoa powder

    3/4 teaspoon double-acting baking powder

    3/4 teaspoon salt

    2 large eggs

    1 cup granulated sugar

    3/4 stick (6 tablespoons) unsalted butter, melted and cooled

    1/2 cup milk

    1 teaspoon vanilla

    1/2 cup chopped walnuts

    3/4 cup firmly packed light brown sugar

    1 1/3 cups boiling water

    garnish: whipped cream and chocolate shavings

    Preheat the oven to 350 degrees F. Into a bowl sift together the flour, 1/3 cup of the cocoa powder, the baking powder, and the salt. In another bowl whisk together the eggs, the granulated sugar, the butter, the milk, and he vanilla, add flour mixture, and stir the batter until it is just combined. Stir in the walnuts and spread the batter evenly in an ungreased 8-inch-square baking pan. In a bowl whisk together the remaining 1/3 cup cocoa powder, the brown sugar, and the water, pour mixture over the batter, and bake the cake in the middle of the preheated oven for 35 to 40 minutes, or until a tester comes out with crumbs adhering to it. Serve the cake hot with ice cream.

    A basic scalloped potatoes recipe baked in the oven.

    Cook Time: 45 minutes

    Ingredients:

        * 4 cups thinly sliced potatoes, about 6 to 8 medium potatoes

        * 2 tablespoons flour

        * 1 teaspoon salt

        * 1/8 teaspoon pepper

        * 3 tablespoons butter

        * 2 cups scalded milk

        * 1/2 cup shredded Cheddar cheese

    Preparation:

    In a buttered 2-quart baking dish, place a layer of about 1/3 of the potatoes. In a cup or small bowl, combine flour with salt and pepper. Sprinkle about half of the flour mixture over the potatoes; repeat with another layer of potatoes and the flour mixture and top with remaining potato slices. Dot with butter then pour hot milk over potatoes. Cover and bake at 375° for 45 minutes. Uncover; sprinkle cheese over the top. Return to the oven and bake, uncovered, for an additional 15 minutes, or until scalloped potatoes are tender and cheese has melted. Scalloped potatoes serves 6 to 8.

    4 c milk

    2 Tbsp salt

    1 lb butter

    1 lb 2 oz flour

    16 eggs

    boil the milk, salt, and butter.  add the flour and mix till it becomes a big ball.  take off the heat, put in a mixer, and mix for about 2 minutes, then slowly add the eggs.  when it's all come together, pipe into little mounds for cream puffs, or logs for eclairs.  bake @375 but  when they are about halfway done, turn the oven down to @325 and let them finish baking and dry out (you want the outside crispy but the inside to be hollow.  

    you can fill these with anything....jam, chocolate, pastry cream, whipped cream, peanut butter, etc.  i like em with whipped cream flavored with alcohol!!  good luck!

    or a nice tall malted shake

    add it to tomato soup

    or a potato cheddar soup

  8. PUDDING ICE CREAM DESSERT

    60 Ritz crackers (1/2 box)

    1 stick butter, melted

    1/2 gallon vanilla ice cream, softened

    1 1/2 c. cold milk

    2 sm. boxes instant pudding (any flavor)

    4 oz. tub Cool Whip

    Roll crackers to crumbs and mix with melted butter (reserve 1/2 cup of dry crumbs). Pat into 9x13 pan. Mix together soft ice cream, milk and pudding; beat for 3 minutes.

    Pour mixture into pan over crumbs; refrigerate at least 2 hours. Spread top with 4 ounces Cool Whip when ready to serve and sprinkle with reserved crumbs. Easy and cool dessert for family or company.

    OREO COOKIE DESSERT

    20 Oreo cookies

    1/2 gallon vanilla ice cream

    2 c. milk

    1 (4 oz.) pkg. vanilla instant pudding

    2 (4 oz.) pkgs. chocolate instant pudding

    Cool Whip

    Crush 20 Oreo cookies and place in bottom of 9 x 12 inch pan.

    Mix 1/2 gallon vanilla ice cream, 2 cups milk, instant vanilla pudding and both instant chocolate puddings. Pour over crushed Oreos. Top with Cool Whip. Sprinkle few crushed cookies on top.

    Let set in refrigerator overnight.

    ICE CREAM DESSERT CAKE

    1 box Ritz crackers

    1 1/2 to 2 sticks butter, melted

    1/2 gallon vanilla ice cream

    2 boxes instant coconut cream pudding

    1 container Cool Whip

    1/2 c. milk

    Crush 80 Ritz crackers finely, add 1 1/2 to 2 sticks melted butter. Pat mixture down in a pan.

    Blend 1/2 gallon vanilla ice cream with 2 boxes instant coconut cream pudding and 1/2 cup milk. Spread over top of crust. Place in freezer 1 hour, take Cool Whip and cover this mixture and sprinkle with crushed Ritz crackers. Freeze for 12 to 16 hours prior to serving.

    PISTACHIO DESSERT

    36 Ritz crackers, crushed

    1 stick butter, melted

    2 pkgs. instant pistachio pudding mix

    1 c. milk

    1/2 gallon vanilla ice cream, softened

    Large container Cool Whip

    5-6 Heath bars

    Mix crackers and butter together and spread in a 9x13 inch pan or 2 (8x8 inch) pans. Bake at 350 degrees for 2 minutes. Mix pudding and milk; add ice cream and some Cool Whip. Pour over cracker crumbs and chill until firm in freezer.

    When firm, cover with remaining Cool Whip and sprinkle with crushed Heath bars. Keep frozen, but take out ahead and soften a bit before serving. Serves 12.

    COCONUT CREAM ICE CREAM DESSERT

    1 stick butter

    60 Ritz crackers, rolled to make crumbs

    1/2 gallon vanilla ice cream, softened

    2 (3 oz.) pkg. instant coconut cream pudding

    1/2 c. milk

    8 oz. container of Cool Whip

    Melt butter and mix with crumbs. Pat into 9 x 13 pan. Mix ice cream, pudding and milk together and pour over crumbs. Chill 1-2 hours. Top with Cool Whip. Sprinkle top with Ritz cracker crumbs.

  9. Homemade pudding

    2 cups milk

    1/2 cup white sugar

    3 tablespoons cornstarch

    1/4 teaspoon salt

    1 teaspoon vanilla extract

    1 tablespoon butter

    In medium saucepan over medium heat, heat milk until bubbles form at edges. In a bowl, combine sugar, cornstarch and salt. Pour into hot milk, a little at a time, stirring to dissolve. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Do not boil. Remove from heat, stir in vanilla and butter. Pour into serving dishes. Chill before serving.

  10. The expiration date on your milk is not the day it will go bad, only the day it can last legally be sold as that product. It can still be used as an ingredient to be sold as another product. Restaurants do this all the time.
