  3. I make eggplant/polenta strata from time to time.

    You slice the eggplant and polenta into small rounds, get some garlic, onion, spinach even asparagus. Some ricotta (I use a vegan friendly) and tomato sauce.

    later in a baking dish polenta, eggplant, vegetable, ricotta, (some crushed garlic) tomato sauce and then repeat until you have the desired size and height.  

    you can top it off with another "cheese" or even a just simply more eggplant.   toss it in the over for an hour at 350 and bingo, you have a delicious and attractive strata, taste almost looks like a lasagna, almost tastes like a lasagna however is almost completely made out of vegetables.

  4. my Italian Grandmother "Noni" passed away at 99 last year. My favourite recipe for eggplant that she made was as follows:

    1 large eggplant, halved, and scored with a knife in cross-hatch pattern, careful not to break through the skin

    4 cloves of garlic, finely minced

    1/2 cup of parsley, finely minced and packed tightly

    salt and pepper

    2 tsps of dried italian spices (mix of basil, oregano, marjoram and parsley etc.)

    olive oil

    Mix garlic, parsley and Italian spices together. Spread over both surfaces of eggplant halves, pressing into score marks as much as possible. Drizzle with olive oil. Place on a piece of heavy duty aluminium and scrunch aluminium around the eggplant to create a 'boat'. Place on a cookie sheet and heat in a 350 degree oven for 45 minutes, till soft and dark. If you love eggplant you will love this.

        * 2 large Japanese eggplants

        * salt

        * 1/4 cup olive oil

        * 1/2 teaspoon paprika

       1. Preheat oven to 300 degrees.

       2. Slice eggplant into rounds and 1/2 inch thick. Sprinkle lightly with salt.

       3. Place slices directly on an oven rack, carefully laying them out so they don't fall between the bars. Bake for 20 minutes or until the eggplant shrinks and becomes dry.

       4. Lightly rinse each slice to remove excess salt. Pat dry with paper towels.

       5. Combine oil and paprika in a small frying pan.

       6. Oven medium-high heat, cook each slice on both sides until crips and browned, 3-4 minutes. Drain on paper towels. Serve warm.
