What are some easy Ecuadorian dishes to make?

I am required to make a main dish and a dessert for my class. (about 30 people) i don't want to spend so much money and i need to be able to buy the ingredients. please help me find the recipe. additional advices are welcomed. and if it is possible, i would like to see pictures too. and if theres a non-alcoholic drink that tastes yummy, please help me with that too. thank you very much!

  1. Llapingachos (Ecuadorian potato pancakes with cheese sauce)

    5 hours | 4 hours prep | SERVES 4  

    A delightful specialty from Equador's highlands, found in a book of "Inca country" recipes. Perfect comfort food! Makes an extremely satisfying meal with a good avocado salad...I guarantee you won't miss meat, and I'm a die-hard carnivore myself. (Just as good with low-fat cream cheese, btw.)

    POTATO PANCAKES

    1 kg potato

    1/2 teaspoon ground annatto seed or turmeric

    1 medium onion, very finely chopped or grated

    120 g shredded mozzarella cheese

    salt

    vegetable oil (for frying)

    CHEESE SAUCE SALSA DE QUESO

    100 ml red onion, finely chopped

    3 teaspoons salt

    1 teaspoon lemon juice

    1/2 teaspoon sugar

    500 g cream cheese

    200 ml milk

    1 ripe peeled tomato

    2 hardboiled egg

    Directions

    1Peel and dice potatoes.

    2Boil in salted water until very tender.

    3Save ½ deciliter (about 1/4 cup) of the boiling water.

    4Mash potatoes evenly and add boiling water, turmeric/annatto and chopped onion.

    5Salt to taste.

    6Cover with a tea towel and leave in a warm place for at least three hours.

    7Prepare cheese sauce while mash is resting.

    8CHEESE SAUCE: Mix chopped red onion well with salt and leave for 20 minutes.

    9Rinse onion in cold water, then add lemon juice and sugar.

    10Chop tomato and eggs finely.

    11Put cream cheese in a pot, and add milk until the sauce is like thin mayonnaise.

    12Heat slowly.

    13Stir in tomato, eggs and onion, plus salt and pepper to taste--I add a little extra lemon juice as well to take some of the"heaviness" out of the sauce.

    14Serve at room temperature or warm, not hot.

    15While sauce is cooling, add mozzarella to potato mix.

    16Roll the"dough" into small balls by hand, wetting your hands a little between each.

    17Flatten balls into patties approx.

    181 cm thick and 6 cm in diameter.

    19Brush pan with oil (not too much) and fry at medium heat until crisp and golden.

    20Brush upside of each pancake with oil before flipping the cakes VERY GENTLY.

    21Don't undercook, or they'll fall apart.

    22Serve hot and fresh with cheese sauce and a salad.

    Ecuadorian Beet Salad

    5 min | 5 min prep |  SERVES 4 -6 , 1/2 cup  

    This is meant to be eaten with plain white rice.

    Ingredients

    3/4 cup cubed cooked and peeled potato

    1/2 cup chopped cooked carrot

    1/2 cup chopped cooked beet

    1 finely chopped hardboiled egg

    1 small chopped very fine red onion

    2 tablespoons vegetable oil

    5 tablespoons fresh lemon juice

    2 tablespoons water

    1 teaspoon salt

    cooked white rice

    Directions

    1mix potatos, beets, carrots, egg and onion together.

    2In a separate bowl mix the oil lemon water and salt.

    3Mix all the ingredients together.

    4Taste make sure it is real tangy from the lemon and salty from the salt. if not then add more.

    5the oil can be substituded with extra water for dieters.

    6Then either steam or boil white rice serve the hot rice with the chilled beat salad and taste them together.
