  1. Quick Chicken Parmesan

4 Boneless Chicken b*****s, pounded flat

1 jar Spaghetti Sauce (I use Prego mushroom and garlic)

    3 oz. Mozzarella Cheese, grated

    2 cups Italian Bread Crumbs

    2 oz. Parmesan Cheese

    1/2 tsp garlic salt

1 egg, plus 1 tbs water, slightly beaten

Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.

    Serving Suggestions:

I serve this with Fettuccini Alfredo and garlic bread.

    Sweet & Sour Meatballs

    1 lb ground beef

    1 tsp garlic salt

    dash pepper

    1 sml can pineapple (optional)

1 can or jar sweet & sour sauce (I like the Contadina brand, but any will work)

Combine first 3 ingredients. Make into meatballs, 1 to 1 ½ inch wide. Place in shallow casserole dish and bake in 350 F oven, for 20 minutes. Drain of grease. Bake for 10 more minutes. Drain again. Pour sauce over meatballs and bake for 15 minutes. Serve over rice. Makes 2-4 servings.

  2. Casseroles are pretty easy! Meatloaf is a good place to start!

  3. Take your boneless, skinless chicken breast, sprinkle a little Good Seasons Italian dressing and some Parmesan cheese on them. Bake at 400F for 20-25 minutes...... mmmm mmmm

  5. Mustard Fried Catfish

    Hot mustard

    Tabasco sauce

    minced garlic

    salt

    black pepper

    2 pounds catfish fillets

    yellow cornmeal

    peanut oil

Combine seasonings in plastic storage bag, shaking to form mixture. Add fillets and marinate for up to 4 hours. Drain fillets, dredge in cornmeal and deep fry in fish fryer or pan fry in cast iron skillet until golden brown.

  6. If you have a crock pot (slow cooker) then you can cook a whole chicken in there. Its very easy and all I do is take out the bag thats inside the chicken and throw it away. Then I place the chicken in the crockpot with some salt, pepper, garlic powder, and a bit of butter on top. I then pour some chicken broth into the pot (about 1 cup) and then put the lid on. Thats it! Then, when its all done, I take the chicken out and shread all the meat off the bones. We are a family of 5 and there is enough chicken for 2 meals, so I freeze 1/2 of it to use for making homemade chicken soup later!

You can also take ground beef and make little meatballs- just season them with some salt and pepper. Then you can use them for all sorts of things like meatballs over rice, spagetti and meatballs, meatball subs, etc...
