A good easy cheap vegan meal:  spaghetti w/marinara topped with soy cheese, side of cooked (frozen) corn, sourdough bread w/garlic and smart balance (all veggie) spread.

oatmeal with fruit and soymilk, peanut butter and jelly, couscous with onions, garlic, tomatoes and zucchini, beans and rice, fruit salad, biscuits with margarine and jam, trail mix with nuts and dried fruit...and I'm not even a vegan, just cheap and lazy.
