What are some fun things to do with my mom?

Some people have weekly "at home spa" nights.

Some have movie nights...

what are some things i can do with my mom once a week?

Something that you both love and will have fun doing. Only you know what your mom likes and can decide what to do special with her.  Even a lazy day together would be fine.

when I was young I would do things like hair and makeup with my mom because we were both totally not into either.  So it was fun to do the whole up do's and movie star make up when we were at home and bored.  and then when we were done, we did facials to get all that c**p off our faces. lol.  Movie nights are not very good in my opinion because you don't get to talk or anything,  you just sit and watch tv essentially.  no good.  You want an activity that you can open up over.  Why don't you start baking?  Most mom's love to show thier daughters how to bake or cook stuff.  and it is a talent that you really do need in the real world.  Good luck with whatever you decide.
